Crazy Macaroni Hot Dogs








Ingredients:

Spaghetti pasta
hot dogs (that have been sliced to make circles)
1 cup grated Cheese
white sauce

Seasoning, to taste






Directions:
1. cut up hot dogs :)
2. start white sauce (homemade alfredo sauce works well for this) add cheese to it -
stir to combine- add a pinch of nutmeg when cheese is melted. (house seasoning minus the salt!! :)
3. let kids poke three noodles in one hot dog - till all dogs are
poked
4. place hot dogs in boiling water (that has been salted) add extra
spaghetti noodles - cook til al dente
5. drain (mostly) then add cheese sauce - gently stir together
6. add red pepper flakes, as desired.

The kids thought this was the most fabulous dinner, EVER!! :) They loved that they helped.

Quesadilla Pie Recipe


Quesadilla Pie Recipe

Brush butter on the bottom of the pan to keep the tortillas from sticking, and to the top of the last tortilla for flavor and to help it brown. Hint: do not skip the butter.

Ingredients

  • 4 large flour tortillas (9-10 inches diameter)
  • Butter
  • 1/2 pound grated cheese, either mild or sharp cheddar, or Monterey Jack
Optional Ingredients - really, the sky is the limit!! ;)
  • Beans, cooked (black beans, pinto beans)
  • Tomatoes, chopped
  • Summer squash, chopped
  • Onions (green onions, red onions, onion greens)
  • Mushrooms (if using a lot, sauté first, to remove moisture)
  • Cooked shredded chicken, pork, or beef
  • Chiles, either from cooked green chiles, chopped pickled jalapenos, or salsa
  • Cumin and/or chili powder for extra heat
Garnishes - again, the sky is the limit!:
  • Chopped avocado
  • Chopped cilantro
  • Thinly sliced iceberg lettuce dressed with vinegar and salt
  • Sour cream
  • Salsa

Directions:

1 Preheat oven to 350°F. Butter the bottoms and sides of a pie dish, approximately the same size as your tortillas
2 Place one tortilla on the bottom of the pie dish. Sprinkle some shredded cheese over the tortilla. At this point, you will begin to add your chosen filling ingredients, and layering the tortillas. Just make sure each layer has a generous sprinkling of cheese. Top off your layers with one last flour tortilla. Spread a little butter over the surface of this tortilla.
3 Cover the dish with aluminum foil. Put in oven for 30 minutes on 350°F. Then remove the foil and increase the heat to 400°F. Cook for another 15-20 minutes, until the top is lightly browned. Remove from oven. Let cool for 10 minutes before serving. Cut into quarters.
Serve with chopped avocados, shredded lettuce, cilantro, salsa, and/or sour cream.
Serves 4.

Cinnamon Twists

Ingredients:
4 tblsp yeast (dry)
1/2 cup warm water
2 cups warm buttermilk
1/2 cup butter (softened
6 tblsp sugar
2 eggs
2 tsp salt
1/2 tsp baking soda
7 1/2 cups flour

Filling:
1/4 cup butter (melted)
1 cup brown sugar
1 tsp cinnamon

Glaze:
1 cup powdered sugar
1 tblsp butter
1 tsp hot water

Directions:
In a mixing bowl, dissolve yeast with water (and a pinch of the sugar).
Add the buttermilk, butter, sugar, eggs, salt and baking soda - mix well.
Stir in flour to form dough.
Knead with Kitchenaid until smooth and elastic - about 6-8 minutes. place in a greased bowl (grease top too).
Cover and let rise in a warm place until doubled - approx. 1 1/2 hours. Punch down and turn onto a slightly floured surface.
Divide dough in 1/2. roll each into 16 X 9 inch rectangle.
Brush with butter, sprinkle cinnamon and brown sugar over top.
Fold in 1/2 lengthwise, forming a 16 inch x 4 1/2 inch rectangle.
Pinch the edges to seal.
Cut into strips - about an inch by 4 1/2 inch.
Twist each strip two or three times. place 2 inc apart on greased baking sheet. Cover and let rise until doubled. (approx 30 minutes).
Bake at 375 degrees for 12-14 minutes or until golden brown.
Remove from pans to wire racks to cool.
Combine glaze ingredients and spoon over warm twists. YUM!!!

Macaroni & Cheese

Ingredients:
1 can Cream of Broccoli (10 3/4oz)1 can Cream of Celery (10 3/4oz)1 3/8 C Milk1/4 Tsp Pepper1/4 Tsp Red Pepper Flakes1/4 Tsp Italian Seasoning3 cups Macaroni pasta1 Tbsp Butter1/4 C Bacon (crumbled)1/4 C Cheddar Cheese (grated)
Directions: (Preheat oven to 400 degrees)
1. Cook pasta in a large pot of boiling, salted water until al dente. Drain2. In large bowl, combine soups, milk, seasonings. Stir in macaroni and butter. Transfer ingredients into a greased 2 quart casserole.
3. Sprinkle Cheese over the top. Then Sprinkle the bacon over the top.4. Bake at 400 debrees F for 25 minutes or until hot and yummily bubbling.
Serve with crusty garlic bread, side salad, crisp veggies. YUM!!!
