HomeMade Vinegar Dressing

This is by far the best Vinegar dressing - EVER! :) At least to me!! & it is very easy!

Ingredients:
1 tsp onion powder
1 tsp garlic powder
1 tsp salt
1 tsp pepper
Red Pepper flakes (to taste - I usually use a pinch and it isn't spicy!)
1 lemon - zested and juiced
1/4 cup Gourmet Salad Vinegar (name of vinegar)
3/4 cup Extra Virgin Olive Oil (EVOO)

Mix everything together except the olive oil. Make sure the taste is as lemony as you like. Drizzle EVOO, blending into the mixture with your emulsifier until it is WELL blended.
:) Use on salads - chicken, fish, YUMMY!!
1/4 onion (pureed)

Egg Salad (with a twist)

Ingredients:

6 eggs (seasoned, scrambled and placed in bowl to cool)
Salt & Pepper to taste
1/4 c bacon bits
1/4 shredded cheese
1/2 of small onion (minced or chopped)
1 tomato, diced
2 celery stalks, chopped
1 tbsp mustard (I prefer grey poupon)
1 lg tbsp mayonaise

Wheat Bread- Triangled (optional: toasted)
Dill pickles, quartered

In the bowl with the eggs, add bacon (to taste), cheese, Mustard and Mayo.

In separate bowl place onion, celery, and tomato bits. Salt and pepper making sure the tomatoes are well seasoned. (this makes them YUMMY).

Place veggie mixture on top of eggs, bacon, cheese, mustard and Mayo. Mix, gently until it is combined. Spread onto bread. Place pickle next to sandwich triangle and Enjoy!!

Easy and Delicious!!


Variations:

Place one can of chicken breast meat in with eggs (omit bacon). YUM!! :)
Use with Boiled Eggs

The Best Rolls, ever!! :)

This is a great recipe from my great friend Sophia Corbridge. These rolls are DIVINE!!! I have made the rolls and the Cinnamon Rolls. :) YUMMY!!
Enjoy!

In a 4 cup measuring cup or bowl, heat 2 cups of milk in the microwave
until hot but not boiling. Not even until it makes that little layer of skin.
Just hot. (How's this for a real recipe?) Remove from the microwave and add 1/2 cup butter. You'll know if the milk is hot enough because it should melt the
butter.

Place in mixing bowl:
3 Tbsp. yeast
1/2 cup warm, but not hot,water
1/2 cup sugar, sprinkled evenly around the yeast and water.
Let this sit for 20 minute until the yeast has risen.

Add to the mixing bowl:
2 eggs
2 Tbsp. Salt
4 cups of
flour

Pour the now warm milk over the flour, eggs, yeast mixture. Mix, adding more flour and kneading until the dough is light and moist. I add flour until the dough stops sticking to the sides of the bowl as it is mixed. Honestly, depending on the weather, some days it's 7 cups total and some days it's 9. Mix until a light fluffy dough. (In my Bosch, I let it mix for ten to fifteen minutes on low.) Then let it sit for 30 minutes. (If you are in a hurry, you can rush the first rising by placing the dough into a well greased bowl and covering it with a damp cloth completely. Place it in the microwave on the lowest setting for ten minutes.) Then, form the rolls into balls or ropes or three little mini-balls placed together in well-buttered muffin tins. Make sure that the pan is lathered in butter. Let raise for 30 more minutes. Bake at 400° until the rolls are golden brown. (about 17 minutes.)


Other Ideas:

Add an extra half cup of sugar to the dough for cinnamon rolls. Roll out into a rectangle. Smother in melted butter. Cover in brown sugar and/or cinnamon sugar. Add raisins or nuts if desired to the dough or sprinkle on at this point. Roll into a long roll. Then, the best trick I ever learned... take a 24" piece of dental floss. Wrap it around your fingers as though you were going to floss. Then, slide the floss under the dough roll, bring it up over the top and around the dough. Pull the floss through the dough, slicing it as thick as you desire. It's so much more simple than any knife or tool I've ever tried!

Roll the dough out into breadsticks and cover with butter, garlic salt, basil and fresh Parmesan cheese for the best garlic rolls ever.

Roll the dough into breadsticks and generously brush melted butter over them in the pan. Then sprinkle with brown sugar and/or cinnamon sugar. Bake then serve with cream cheese frosting on the side to dip them in.

Roll the dough out very thin onto pizza pans that have been covered in butter for "Pan Pizza".

Roll the dough out into 3/8" thickness and deep-fry them for scones. Serve with honey-butter or cinnamon sugar or peanut butter or jam or any topping that flips your trigger!

Roll the dough out into a large rectangle on your baking pan (a jelly roll pan works best). Fill the center third length-wise with meat (bbq beef, sliced turkey, ham, roast beef, ground beef, you name it) and then top with shredded cheese and the dressing of your choice. Either braid the top of the bread or simply fold over the sides to the top and blanket the filling. Bake until the bread is golden brown. You can brush egg white on it before baking, if desired.

Roll the dough into a rectangle and simply fill it with cheese on one half. Wrap the other half over the cheese and then seal the edges. Giant Calzone style. Dip the bread into ranch dressing, jelly, you name it! Great snack and great way to use left-over dough.

Basil Chicken

Ingredients:

4 Chicken Breasts (boneless, skinless)
2 red peppers - sliced or diced (I actually have to puree mine because Curtis is anti Veggie) :)
2 tsp Chopped garlic
1 pkg fresh basil - chopped
1 pint Cream
3 cups shredded paremsan cheese
2 tsp Olive Oil
1 pkg pasta (can be whole wheat) cooked al dente

Cook chicken, garlic and half of the basil in skillet over medium heat in olive oil for about 10 minutes. Add the red peppers and lower heat, cooking for 5 more minutes.

Next pour cream and cheese over the chicken. Add the remaining basil. Simmer on low for 15-20 minutes - just until sauce thickens and the chicken is nice and tender.

Serve over the cooked pasta with asparagus or a salad! YUMMY!!

Tamale Pie

3/4 C. Cornmeal
1.5 C. Milk
1 Egg, Beaten
1 lb ground beef, browned and drained
1 envelope dry chili seasoning ( or use your favorite Chile seasonings!)
16 oz. can diced tomatoes (can use Rotel)
16 oz. can corn, drained (or use frozen)
1 c grated Cheddar Cheese

Combine Cornmeal, milk and egg. Stir in meat, seasoning mix, tomatoes and corn until blended. pour into slow cooker. Cover. Cook on high for 1 hour then on low for 3 hours. Sprinkle with cheese. Cook another 5 minutes until cheese is melted.

Garnish with Cilantro, onions, sour cream, etc.

Serve with refried beans! YUM!!

Southwest Chicken Casserole

Ingredients
1 Tsp Salt
1/2 Tsp Pepper
1/2 lb Chicken Cubed
1/4 C Butter

3 1/2 C Broccoli

1 lb Cheese
1 can Rotel
1 can Green Chiles (chopped)

Garnish: 1 C finely chopped Cilantro (or Parsley)

Cook the seasonings, chicken, butter and Cilantro in a skillet over medium heat for about 10 minutes. Add the Broccoli and cook until just tender (not soft). In a separate pot: add the Cheese, Rotel and Green chiles until Cheese is melted.

Place 4 cups cooked rice in Casserole dish - spoon the Chicken mixture over the rice. Pour cheese mixture over the chicken. Cover and bake 25-30 minutes in a 350 degree oven.

Garnish with the 1 cup of Cilantro (or parsley)

Serve with Corn and Sour Cream! YUM!! (maybe some refried beans!!)

Junior Juddz Lemonade Stand

Judd House Seasoning

I get tired of grinding my pepper and putting the same ingredients into everything. :) SO! I made my own "mix" of our family's favorite Dried seasonings. Very easy and stores as well mixed together as it did separately. :)

I usually make 1/8 cup of each and mix it together. I keep my Costco/Sams Club large herb containers to store it in. :)
1/8 cup of the following:
Onion Powder
Garlic Powder
Kosher Salt
Freshly ground Black Pepper
(I take my peppercorns and put them in my "herb grinder" (coffee grinder) until I get my desired amount.)
Make sure you get them well mixed. Then store. Makes it easier to put in recipes! You can add more salt and pepper- but I really like this blend. Trying not to use TOO much salt in the diet anyway.

Chicken Pillows

YUM! My niece,Heidi,told me about this recipe and I tweaked it to fit our family!! :) (you know, Mr Curtis is a NON VEGETABLE kind of guy!!)
Ingredients:
1/2 a Roasted Chicken (can replace with canned/bottled chicken)
1 8oz Cream Cheese (softened)
1/2 cup Shredded Cheese
1 Tsp Judd House Seasoning (equal parts Salt, Pepper, Garlic Powder, Onion Powder)
2 cans Crescent Rolls OR 1 package Won Ton Wrappers (small)
OPTIONAL Ingredients:
1 can Roasted Green Chili's drained (Optional)
1 Onion - GRATED (you can dice yours, if your family likes 'em)
1 Celery Stalk - diced fairly small
1 Carrot - diced fairly small
1 Red or Yellow Bell Pepper - diced fairly Small
Green Onion to taste and to garnish the top.
Mix all ingredients. Put a drop at a time onto roll dough or won ton wrappers. Roll up/close up. Bake for 12 - 15 minutes at 375 degrees. (you can fry the won tons and that is pretty yummy, too) YUM!!

Hardly Famous Homemade Taco's

Curtis makes Sunday Dinner (or lunch depending on the time of our Church) EVERY week. Apparently it is a tradition from when he was growing up.

Taco's.

So, here is his Hardly Famous Recipe for his Homemade Taco's.

Ingredients:

12 Arizona Brand Taco White Corn Tortillas
1 lb ground beef (90% lean)
1 tsp Judd Family "House" seasoning (equal parts: salt, pepper, garlic powder, onion powder)
1 tbsp Chili Powder
1 tsp Taco Seasoning
1/4 cup Tomato Sauce

Toppings of your choice!!

Pan fry the tortillas in Vegetable oil. Don't over cook or they get too crispy. Don't undercook or they are chewy. Let drain on napkin.

Brown the meat - wait to season until after you drain off the excess fat. (This will keep your meat from getting to mushy and less 'meat bit' like. :) Then add all seasonings and sauce. Stir and let sit for a minute or two on low heat (if gas) or OFF if electric.

Add to taco shells. Top with toppings of your choice. Lettuce, tomato, onion, green onion, olives, cucumber bits (YUM!)

Cheesey Taco's

This is my children's all-time FAVORITE go to meal. :) What could be easier? It is like Grilled Cheese sammy's without the fuss. Love it!

Ingredients:
Shredded Cheese (your choice)
Corn Tortillas
Additional Toppings: lettuce, extra cheese, tomatoes, onion, celery, carrot, taco sauce to dip in, etc. Whatever you like on your taco's will be perfect on these little goodies! :)

Place 1 tortilla on plate. Sprinkle with Cheese. Place in microwave for 11 seconds at a time until melted. Fold over like a taco, serve. Delish!

Okay, we have made it with shredded roasted chicken, Ham and provolone, Swiss Cheese, tomato and onion. You can add shredded lettuce on top - leave it plain. We have also tried apples and cinnamon with cream cheese frosting inside. YUM!! :)
