Scrumptious Scones

Ingredients:
1 cup sour cream
1 tsp baking soda
4 cups all-purpose flour
1 cup sugar
2 tsp baking powder
1 tsp salt
1/4 tsp cream of tartar
1 cup butter
1 egg

Directions:
Combine the sour cream and baking soda in a 2 cup bowl or measuring cup. The mixture expands so it needs extra space. Set it aside.
Whisk together dry ingredients in a large mixing bowl. Cut butter into dry ingredients using a pastry blender until mixture resembles course cornmeal. Add sour cream mixture and egg.
Mix until a soft dough forms - use your hands if necessary.
Turn dough onto a lightly floured surface. Knead it a few times. Then pat or roll it until 1 inch thick. Cut into circles or into triangles with a pizza cutter.
Place scones 2" apart on lightly greased baking sheet.
Glaze if desired
Bake at 350* for 20-25 minutes or until bottom edges are golden brown.
Makes 8-14 depending on the size of your scones.

GLAZE:
Ingredients:
1 egg
1 tbsp whipping cream

Directions:
Mix together the egg and cream. Brush on top of unbaked scones and bake as directed. Sprinkle cooked scones with powdered sugar. Set oven to broil, leaving oven rack in center position. Put the pan in the oven, keeping door open, and watch closely. Sugar takes 30-90 seconds to turn a golden brown. Remove from oven and serve while still warm.
If you want to freeze them: Bake them as directed. When cool, put in zip-top plastic bag - removing as much air as possible. To defrost, remove from freezer and let thaw at room temperature for 2 hours. Can reheat in microwave.

Gma T's: Honey Marmalade Monkey Bread/Pull Apart Bread

My grandmother, about 2 years ago, gave me her box of recipes. She passed away in April, on the 14th, 2015. My goal this year is to get as many of her favorites onto my Cooking Blog so that I can share them with all interested family and friends.

* Handwritten on a small journal or notebook page

Ingredients:
 1/2c chopped nuts
2/3 c orange marmalade (or any flavor jam or preserve - not jelly)
1/4 cup honey
2 tbsp melted butter or margarine
2 cans refrigerated biscuits

Directions:
 Heat oven to 375*. Grease 9 or 10 inch tube pan or a bundt pan. In small bowl, combine nuts, marmalade, honey and butter. Separate the biscuits and cut each into quarters. Place half of biscuits in prepared pan. Spoon half of marmalade mix over biscuits. Repeat until gone. Top with any remaining marmalade mix.
Bake for 23-27 minutes or until deep golden brown. Invert onto a serving plate.

Gma T: Pain D'Epices

My grandmother, about 2 years ago, gave me her box of recipes. She passed away in April, on the 14th, 2015. My goal this year is to get as many of her favorites onto my Cooking Blog so that I can share them with all interested family and friends.
"This excellent bread makes a wonderful Christmas Gift. Cut into very thin slices and serve with whipped butter or serve it like the French with raspberry jam. It is especially tasty this way! A very good fruit bread is made by simply adding 1 cup of any desired chopped, dried fruit and/or nuts.
Ingredients:
1 1/2 cup boiling water
3/4 cup honey
1 cup sugar (can use brown sugar - all or part)
4 cups flour
1 1/2 tsp baking soda
1 to 2 tsp cinnamon
1/2 cup rum (apple juice can be substituted and 1 tbsp rum extract and 1 tsp vanilla)

Directions:
Pour the boiling water over the honey and sugar. Stir to combine thoroughly. Stir all the dry ingredients into a large bowl. Pour the liquid ingredients into the dry ingredients and blend well. Stir the rum in last.
(For sweet bread: I add 1/2 cup each of raisins and nuts, stirring them in at the last.)
Pour into 10x5x3" loaf pan that has been sprayed with cooking spray
Bake for 1 1/4 hour or until toothpick or cake tester comes out clean.
Cool thoroughly, then wrap and store carefully.
If it is kept wrapped tightly it will keep longer.

Apple Cinnamon Swirly Bread

From my friend Sophia's tried & true recipes - YUM!!

Apple Cinnamon Swirl Bread

3 cups warm water
2 Tbsp. dry yeast
1/2 cup sugar

Pour all into the bowl and let rise for about 15 minutes until the yeast is bubbly.

Then add:
1 egg
1/2 cup oil or melted butter
1 tbsp. salt
flour
1 chopped fresh large apple or 1/2 cup of dried apples

Add about 3 cups of flour then continue to add flour as it mixes until is barely sticks to the sides of the bowl. About 5-6 cups total.

When the dough is starting to become sticky, add the apples.

Knead it for about twenty minutes, then let it rise until it's more than doubled in size.

butter, melted
cinnamon sugar
brown sugar

Once it's doubled, butter your clean countertop and pull about 1/4 of the dough onto the counter.

Roll it out to be the width of the bread pan.

Pour melted butter over to cover the dough.

Then, sprinkle the brown sugar and cinnamon sugar to cover the dough.

Roll it up like a jelly roll.

Place in the bread pan and let rise again until double.

Repeat to make two large loaves.

Bake at 375 degrees until golden on the top.

Remove from the pan immediately.

Do not wrap or contain the bread until it is completely cooled.

Add a touch of •extra sweet• with a glaze of powdered sugar, milk and a touch of butter, cinnamon, vanilla, or almond extract.

Versatile Fry Bread

Ingredients:

1 Tbsp. dry yeast

1 Tbsp. Sugar

1 cup warm water

1 tsp. salt

2 1/2 cups flour

2 Tbsp. olive or vegetable oil

Mix the yeast and sugar in warm water until bubbly and fluffy. (Let it sit for five minutes.) Add salt, oil and flour. Stir 20 times with a fork. Let rise about fifteen minutes.

For pizza:

Bake 20-25 minutes at 450 degrees. Use all the dough to make one large pizza or split in half for a thinner crust. *For crispy crust, roll out in corn meal. (Yummy.)

Breadsticks

Roll out dough, cut and twist into strips. Coat with garlic butter and/or cheese. Bake 20 minutes or until golden.

Fry bread

Stretch or roll dough out flat and fry in hot oil (375 degrees) until golden.

For Navajo Tacos: Serve all the toppings along with the fry bread and let your guest add what they'd like. Choose from:

Browned ground beef with onions, peppers and taco seasoning mix

Refried beans, pinto beans, chili

shredded cheddar cheese

lettuce

onions

olives

tomatoes

any of your favorite taco toppings

top with salsa and ranch dressing

Breakfast Fry Bread:

Jams and Jellies

Honey

Honey Butter

Powdered sugar

cinnamon sugar

Sugar

A powdered sugar glaze

fresh fruit and whipping cream

Orange Cream Cheese Loaf

Ingredients

1-8 oz package cream cheese, softened

1/2 c softened butter (not melted)

1 2/3 c granulated sugar

2  eggs

2 1/4 c all-purpose flour

1 tsp salt

1 Tbsp baking powder

1 c milk

1/2 c chopped walnuts

2 Tbsp grated orange peel

1/4 c orange juice

 

Directions

1 Combine cream cheese and shortening, creaming well.

2 Gradually add sugar, beating until light and fluffy.

3 Add eggs, beating well after each addition.

4 Combine flour, baking powder and salt; add to creamed mixture alternately with milk, beginning and ending with flour mixture. Mix well after each addition.

5 Stir in walnuts and orange peel.

6 Pour batter into 2 greased and floured 8-1/2 x 4-1/2 x 3 inch loaf pans.

7 Bake at 375 degrees F for 55 minutes or until a wooden toothpick inserted into center comes out clean.

8 Let cool in pan for 10 minutes. Then sprinkle orange juice over loaves. Remove to wire rack to finish cooling
