Floutas

Ingredients:
Corn or Flour Tortillas
2 cans chicken (or 1 rotisserie Chx) or 4 Chx Breasts
8oz Cream Cheese
1 small onion
1 can Green Chili
1 tsp Cumin
1 tsp House Seasoning
1/2 Tsp Extra Pepper
Smidgeon Cayenne Pepper
1/2 tsp Southwest Seasoning
Dash Cinnamon
Directions:
Grate onion into bowl. Add green chilis and Cream Cheese - using emulsifier - blend until smooth. Add chicken and seasonings. Stir.
Spoon on a small amount and spread evenly over tortilla. Roll up and poke with toothpick.
After all are completed - deep fry (or bake in oven at 450 for 25 minutes) until golden. Sprinkle a pinch of salt over when finished.
Serve with guacamole, sourcream, side salad, salsa, &/or cheese dip. Quickly will become family favorite!!

Basic Biscuits

These biscuits are our all-time favorites. They are DEEEEEEEEEEEEEEEElicious!! :)
Yields approx. 3 dz biscuits (small or 18 large biscuits)
2 tblsp yeast (or 1 packet)
1/2 cup lukewarm water
5 cups flour
1 tsp baking soda
1 tsp salt
1 tsp baking powder
2 tbsp sugar
2 stick butter or 3/4 cup Crisco
2 cups Heavy Cream or buttermilk
Preheat oven to 400 degrees. Dissolve yeast in warm water and set aside. Mix dry ingredients together. Cut in butter/shortening. Add yeast and milk and mix it all up.
You can either make drop bisuits (my preferred method) - get a portion in your hand and make a ball and then flatten it out - so it is a little circular flat disc.
OR
Turn dough onto lightly floured surface and roll out to desired thickness. Cut with biscuit cutter.
THEN:
Place on greased cookie sheet OR cookie sheet lined with foil (love this!!) and bake for 12 minutes or until golden brown.

Sloppy Judd's (aka Sloppy Joes)

Ingredients:

2 pound ground beef

1 1/2 cup ketchup

1/2 cup Chili Sauce

8 tablespoons water

4 tablespoon brown sugar

4 teaspoon Worcestershire sauce

4 teaspoon Dijon mustard

1 tsp garlic powder & 1 tsp onion powder & 1 tsp salt & 1 Tsp Pepper

OR 3 Tsp of House Seasoning :)

8-10 hamburger buns, split

Directions:

In a saucepan, cook beef over medium heat until no longer pink; drain. Stir in the other ingredients and then bring to a boil. Reduce heat; cover and simmer for 30-40 minutes. Serve on buttery toasted homemade buns.

YUM!!

Toppings:

Grated Carrot

Grated Zucchini

Grated Parmesan

Grated Cheddar Cheese

Bacon Crumbles

Sour Cream Sauce

Serve with a side salad or Coleslaw and a Watermelon Lemonade!! J YUM!!!
