Gma T's: Date Pie Cake

My grandmother, about 2 years ago, gave me her box of recipes. She passed away April 14th, 2015. My goal this year is to get as many of her recipes onto my Cooking Blog so that I can share them with all interested family and friends.

Ingredients:
1/2 tsp baking powder
1 c sugar
1 1/2 c dates
1/2 tsp vanilla
3 egg whites beaten until frothy
16 soda crackers ground fine

Directions:
Mix and bake in greased cake pan at 350* for 30 minutes. Cut into squares.

Make it a great one!!

Gma T's: Dutch Honey Cake

My grandmother, about 2 years ago, gave me her box of recipes. She passed away April 14th, 2015. My goal this year is to get as many of her recipes onto my Cooking Blog so that I can share them with all interested family and friends.

Ingredients:
3 tbsp honey (generous tbsp)
2 1/2 c light brown sugar
1 1/4 c milk
4 c flour
1 tsp salt
1 tsp baking powder
1 tsp baking soda
1/8 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp cloves

Directions:
Mix honey, brown sugar and milk. Sift dry ingredients and stir into honey mixture.
Pour into 2 loaf pans.
Bake at 300* for 45-60 minutes.
Sprinkle with powdered sugar, if desired.

Make it a great one!!

Gma T's: Chocolate Sauerkraut Cake

My grandmother, about 2 years ago, gave me her box of recipes. She passed away April 14th, 2015. My goal this year is to get as many of her recipes onto my Cooking Blog so that I can share them with all interested family and friends.

Ingredients:
2/3 c butter
1 1/2 c sugar
3 eggs
1 tsp vanilla
1/2 c unsweetened cocoa
2 1/4 c all-purpose flour
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1 c water
2/3 c rinsed, drained and chopped sauerkraut

Directions:
Cream well the butter and sugar. Beat in the eggs and vanilla. Sift together dry ingredients. Add alternately with water to egg mixture. Stir in the sauerkraut.Turn into 2 greased and floured 8 inch square or round baking pans. Bake in 350* oven for 30 minutes or until done.

Fill and frost with chocolate whipped cream

Chocolate Whipped Cream {Frosting}
Ingredients:
1 1/2 c whipped cream
2 tsp cocoa
2 tsp powdered sugar
1/2 tsp vanilla

Directions:

Mix all of the ingredients together until soft peaks form.
Frost cake. :)

Pozole

Happy Birthday to my best friend Camilley! We have known each other since 7th grade and have been Best Friends since the summer before 9th Grade. I love spending time with her and am SOOOO grateful that she 'followed' me and my family to our fair City. I love that We have been Visiting Teaching Companions for over 7 years. LOVE IT!! :) Have a Unicorn, Glittery and Fabulous Birthday Camille!! I love you!!
Ingredients:
For broth:
2-3 lb pork shoulder/butt                                       6 chicken thighs
1 tbsp oil (vegetable or canola preferred)                2 onions (Quartered)
1 head of garlic – peeled and smashed                    6 garlic cloves chopped or sliced finely
3 carrots chopped into large chunks                      ½ stalk celery chopped into large chunks
2 tbsp Cumin powder                                              2 tbsp Paprika (smoked)
2 tbsp oregano (Mexican)                                       2 tbsp coriander powder
2 bay leaves                                   2 tbsp Salt                1 Tbsp pepper
For Soup:
1 #10 can of white hominy (drained) Salt and pepper to taste
Garnishes:
3-4 limes cut into thin wedges                            1 head of green cabbage – thinly sliced
2 dozen radishes – thinly sliced/diced                 2 bunches of Cilantro chopped
2 bunches green onion chopped                          Red pepper flakes
Dried Oregano
Directions:
Place pork into large pressure cooker or large soup pot. You can add oil first and then sear each side of roast – but I skip this step as I want the roast soft and shreddable. Cover with water. (I put approximately 7 quarts of water. (If you want to do a ‘fast’ version use pork stock or chicken stock and reduce cooking time to 3-4 hours – just until roast is shreddable.). I bring water to a slow boil and then reduce heat to low. At this point you can skim off the gray matter that is at the surface. Add in the quartered onions, carrots, celery and head of garlic. This is also a good time to add in chicken, cumin, coriander, paprika, oregano and bay leaves. Cook on low heat setting for 6-8 hours. I don’t cover until the liquid has reduced by a couple inches. Then I add in more water (2 inches worth) and mostly cover. (I used a cookie sheet over the top of my canner)
After letting it simmer lo and slow, I pull out the carrots, onion, celery and garlic. Let cool over night in refrigerator. In the morning, skim off any fat that has hardened at top of soup. Add in hominy. Continue to let simmer for another 6 hours. Adjust seasonings as needed. Shred the meat or chop into smallish pieces either before refrigerating or after a couple of hours on the stove the second round.
Prepare garnishes.
Notes: Traditionally Pozole is served separately, People add in whatever garnishes they want to the delicious broth. I have even had it where the meat is separated from the broth and people add that in – however much they want. The oregano and red pepper flakes should be rubbed between palms as they are added to the bowl. Everyone can layer their soup however they want. Broth first or veggies first – You decide!  Enjoy!

Gma T's: Chocolate Mousse Icebox Cake

My grandmother, about 2 years ago, gave me her box of recipes. She passed away April 14th, 2015. My goal this year is to get as many of her recipes onto my Cooking Blog so that I can share them with all interested family and friends.

Ingredients:
4 pkg 3oz size ladyfingers, split lengthwise

 3 pkg 6oz size semisweet chocolate pieces
1 c sugar
1 tsp vanilla
8 eggs, separated
Confectioners sugar

Directions: 

1. Line side and then bottom of 9 inch springform pan (or pretty clear glass bowl) ladyfingers, split side in. Set aside.
2. In medium saucepan, combine chocolate pieces, granulated sugar, and 1/2 c water. Over low heat, stir constantly until chocolate is melted and sugar is dissolved. Remove from heat. Add vanilla and beat with wooden spoon until smooth. Set aside, and let cool slightly.
3. In large mixing bowl, at medium speed, beat egg yolks slightly. Gradually add the chocolate mixture. Beating constantly. Continue beating until it thickens.
4. With clean beaters, beat egg whites just until stiff peaks form when beaters are slowly raised. With wire whisk or rubber scraper, using an under-over motion, gently fold beaten egg whites into chocolate mixture just until combined.
5. Spread a fourth of chocolate mixture over ladyfingers in springform pan. Cover mixture with a layer of ladyfingers. Repeat 3 times.
6. Refrigerate until firm - 4 hours or overnight.
7. To serve: Gently remove side of pan if using springform, place cake on serving plate or leave in pretty glass bowl. :)
8. Sprinkle cake liberally with powdered sugar.
Makes 14 servings.

Gma T's: Cherry Nut Cake

My grandmother, about 2 years ago, gave me her box of recipes. She passed away April 14th, 2015. My goal this year is to get as many of her recipes onto my Cooking Blog so that I can share them with all interested family and friends.

*Written by hand by Grandma. Recipe attributed to Lucille Strebling Ellis  

Ingredients:
1 pkg deluxe cherry cake mix (Duncan Hines recommended)
1 pkg (4 serving size) vanilla instant pudding/pie filling mix
1 1/4 c buttermilk
4 eggs
1/2 c oil
1 c coconut
1 c finely chopped pecans

Directions:
Preheat oven to 350*. Grease and flour 10 inch tube pan.
Put all but last 2 ingredients into bowl and mix as directed on cake mix.  Mix in coconut and pecans.
Turn into pan and spread evenly.
Bake at 350* for 50-60 minutes or until toothpick in center comes out clean.
Cool for 1 hour in pan on rack.
Remove from pan.
Let stand overnight before serving.
Sift powdered sugar over top, if desired. (or a light glaze would be good).

Gma T's: Don't Last Long Cake or Hummingbird Cake

Ingredients:3 c flour
1 1/2 c oil
3 eggs
1 c chopped nuts (she didn't use them)
2 c sugar
1 tsp baking soda
1 tsp cinnamon
2 c chopped bananas (or mashed)
1 flat can crushed pineapple and juice (would assume the small ones . . .)


Directions:
Mix dry ingredients add remaining ingredients. Mix well.
Bake in a tube pan for 90 minutes at 3508*

Great Grandmothers Notes: "Makes a big cake. Freezes well. I sliced mine before I froze it."

Gma T's: Cherry Crown Cake

My grandmother, about 2 years ago, gave me her box of recipes. She passed away April 14th, 2015. My goal this year is to get as many of her recipes onto my Cooking Blog so that I can share them with all interested family and friends.

Ingredients:
2 1/4 c flour
1 1/3 c sugar
1 tbsp baking powder
1 tsp salt
 1 c milk
1 tsp almond extract
2 eggs
1/2 c chopped walnuts
2 c grated coconut
1 21oz can cherry pie filling - chilled

Directions:
Combine dry ingredients; blend in butter and milk. Beat for 90 seconds on low speed or 225 strokes by hand. Add flavoring and eggs. Beat for another 90 seconds.  Stir in nuts. Sprinkle 2/3 c coconut into each of 2 cake rounds. Pour batter into pans and sprinkle top of each with 1/3 c coconut,
Bake at 350* for 35-40 minutes. Cool
Spread pie filling between layers and on top to within 1 inch of edge. Then frost  sides and the inch borders with the following frosting and refrigerate.

Butter Cream Frosting:
Ingredients:
2 tbsp flour
1/2 c milk
1/2 c butter
1 c powdered sugar
1/4 tsp almond extract
Directions:
Blend flour and milk in sauce pan. Cook over low heat until very thick - stirring constantly. Cool completely. IT MUST BE COLD!!
Cream butter and sugar and flavoring until light and fluffy. Beat in flour mixture until smooth.
Frost cake immediately.

Gma T's: Carrot Cake

Happy Birthday Josh! We hope that this day brings you much happiness and a year full of greatness!! We sure love you!! Thanks for being a pretty super awesome oldest son!! :) Hug your wife and cute boys for us!

Ingredients:
2 c sugar
2 c flour
2 tsp baking soda
2 tsp baking powder
2 tsp cinnamon
1 tsp salt
1 1/2 c oil (veggie, canola, etc)
4 eggs
3 c grated carrots
1 c chopped pecans

Directions:
Mix all ingredients well (everything up to the eggs.) Then add the carrots and pecans.
Bake at 350* for 40-45 minutes.

When cooled completely, frost with  

Cream Cheese Frosting.

Mix 1lb powdered sugar with 8oz cream cheese and 1 tsp vanilla. Frost cake!

Gma T's: Brown Sugar Cake

Ingredients:
1 pkg brown sugar
1 c margarine or 1/2 c shortening
4 eggs
1 1/4 c sweet milk
2 tsp baking powder
3 c flour
1 c nuts (optional)
1 tsp vanilla

Directions:
Mix all ingredients except the eggs. Beat for 2 minutes. Add eggs and beat 2 more minutes.

Bake in tube pan at 350* for 1 hour and 15 minutes. Frost or not, according to taste. (is delicious without frosting).

Dr. Pepper Pulled Pork

                                    Prep Time: 5 Minutes Cook Time: 6 Hours Difficulty: Easy Servings:18
Ingredients
 1 whole Large Onion
 1 whole Pork Shoulder ("pork Butt") - 5 To 7 Pounds
 Salt And Freshly Ground Black Pepper
 1 can (11 Ounce) Chipotle Peppers In Adobo Sauce (OPTIONAL!)
 2 cans Dr. Pepper or Root Beer or use Chicken broth
 2 Tablespoons Brown Sugar
Instructions
Preheat oven to 300 degrees. OR USE A SLOW COOKER --  Either way works fine
Peel the onion and cut it into wedges. Lay them in the bottom of a large dutch oven.
Generously salt and pepper the pork roast, then set it on top of the onions in the pan.
Pour the can of chipotle peppers over the pork (include the sauce.) Pour in both cans of Dr Pepper. Add brown sugar to the juice and stir in.
Place lid tightly on pot, then set pot in the oven. Cook for at least six hours, turning roast two or three times during the cooking process. Check meat after six hours; it should be absolutely falling apart (use two forks to test.) If it's not falling apart, return to the oven for another hour.
Remove meat from pot and place on a cutting board or other work surface. Use two forks to shred meat, discarding large pieces of fat. Strain as much of the fat off the top of the cooking liquid as you can and discard it. Return the shredded meat to the cooking liquid, and keep warm until ready to serve. (You can also refrigerate the meat and liquid separately, then remove hardened fat once it's cold. Then heat up the liquid on the stovetop and return the meat to the liquid to warm up.

Gma T's: Banana Nut Cake

My grandmother, about 2 years ago, gave me her box of recipes. She passed away April 14th, 2015. My goal this year is to get as many of her recipes onto my Cooking Blog so that I can share them with all interested family and friends.

*This recipe is handwritten - but NOT in Grandma T's handwriting.   

Ingredients:
1 c sugar
1 stick butter
3 eggs
3-4 bananas
1 1/2 c flour
1 tsp baking powder
1/4 tsp salt
1 tsp baking soda
1 tsp vanilla
1 c nuts (chopped)

Directions:
Preheat oven to 350*
Cream sugar and butter. Add egg yolks, bananas, nuts and beat.
Add remainder of dry ingredients.
Gently fold in beaten egg whites.
Add vanilla
Pour in 2 cake pans
Bake for 1/2 to 3/4 hour - until done.

Make it a great one!!

Gma T's: Warm Applesauce Cake

My grandmother, about 2 years ago, gave me her box of recipes. She passed away April 14th, 2015. My goal this year is to get as many of her recipes onto my Cooking Blog so that I can share them with all interested family and friends.

*This recipe is cut from a newspaper - no date, etc. 

Ingredients/Directions:
Cream 1/2 c margarine (butter) with 1/2 c brown sugar and 2/3 c white sugar until light.
Add 2 eggs and beat well.
Sift together 2 c flour, 1 tsp each of salt, baking soda, cinnamon, baking powder, 1/2 tsp nutmeg and  1/4 tsp cloves.
Add to creamed mixture - alternating with 1 1/2 c applesauce. Beat well after each addition.
Stir in 1/2 c walnuts and 1/2 raisins.
Spread batter into greased 9x13 pan.
Bake 35 to 40 minutes in 350* oven.
Serve plain or with a dollop of homemade whipped cream!

Gma T's: Bozo Cake

My grandmother, about 2 years ago, gave me her box of recipes. She passed away April 14th, 2015. My goal this year is to get as many of her recipes onto my Cooking Blog so that I can share them with all interested family and friends.

* Typed out on large index card 

Ingredients:
1 c brown sugar (packed)
1 scant c white sugar
1/2 c oil
1/2 tsp allspice
1/2 tsp cloves
1/2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp ginger
2 eggs
1 tsp baking soda
1/4 tsp salt
3 c flour
1 c raisins (cooked in enough water for 1 c juice)
1/4 c nuts, optional

Directions:
Cream oil, sugars, and eggs. Add dry ingredients, & raisin juice. Beat well -- the more you beat, the smoother the texture. Add raisins and nuts.
Bake at 350* in a greased and floured sheet cake pan (9x13) or layer or loaf pan. Thin glaze is best or frost, as desired.

Gma T's: Apple Sauce Cake

My grandmother, about 2 years ago, gave me her box of recipes. She passed away April 14th, 2015. My goal this year is to get as many of her recipes onto my Cooking Blog so that I can share them with all interested family and friends.

Ingredients:
1 3/4 c cake flour
1 tsp baking soda
1/2 tsp ground cloves
1/2 tsp salt
1/3 to 1/2 c shortening
1 c sugar
1 egg (unbeaten)
1 c unsweetened, tart, stiff or canned applesauce
1 c seedless raisins

Directions:
Sift flour, measure and resift 3 times with soda, spices and salt.
Cream shortening well and gradually blend in sugar. Add egg and beat until light and fluffy
Then stir in the applesauce.
Add flour mixture in 3 portions. Beating after each addition until well blended.
Stir in the raisins.
Turn into lined with parchment pans:
                 8" square cake pan - for 45 minutes
                Greased muffin pan for 25-30 minutes
                2 8" round cake pans for 25-30 minutes
 Bake in preheated oven at 350*
Cool before serving. Applesauce cake improves in flavor after storing in bread box 1-2 days.

Bran is a hearty complement to the flavor of chocolate. In Cunningham's book, the baking time for this recipe is excessive - it has been changed here.
Ingredients:
butter and flour for pan
4 tbsp butter
1/2 c sugar
1 egg
2 tbsp unsweetened cocoa
1/3 c milk
1/3 c butter milk
1 c flour
1 c bran
1/2 tsp baking soda
1/4 tsp salt
Honey Chocolate Glaze (recipe from yesterdays post)

Directions:
Grease and flour an 8 or 9 inch round cake pan
Combine the butter, sugar, egg and cocoa in a mixing bowl - beat until mixture is smooth and well-blended
Pour in the milk and butter milk (or use 2/3 c milk and 3/4 tbsp vinegar)
Combine the flour, bran, baking soda, and salt - add them to the bowl - beat until the batter is well mixed and smooth.
Pour into the prepared cake pan. Bake at 350* for about 25 minutes or until the middle is

Gma T's: Chocolate Velvet Cakes

My grandmother, about 2 years ago, gave me her box of recipes. She passed away April 14th, 2015. My goal this year is to get as many of her recipes onto my Cooking Blog so that I can share them with all interested family and friends.

* This was from a magazine - cut & pasted on cardstock with a handwritten title 

Ingredients:
2 1/4 c flour
1 tsp baking soda
1/4 tsp baking powder
1 2/3 c sugar
3 eggs
1 tsp vanilla
1 c mayonnaise
4 squares unsweetened chocolate - melted
1 1/3 c water
Crunchy Coconut Topping Ingredients:
3/4 c brown sugar
1/4 c butter
3 tbsp milk
1 1/3 c coconut (flaked)
1/2 c chopped walnuts

Directions:

Grease and flour 13x9 baking pan.
In bowl, stir flour, soda and powder together.
In a larger bowl, beat Sugar, eggs and vanilla for 3 minutes or until fluffy.
Reduce speed and add mayonnaise and chocolate.
At low speed at the flour mixture - but just until blended
Pour into pan and bake at 350* for 45 minutes or until tester comes out clean.
cool completely in pan

Crunchy Coconut Topping Directions:
In saucepan, stirring constantly, bring 3/4 c firmly packed brown sugar and 1/4 c butter or margarine to boil over medium heat.
Boil for 2 minutes
Add the milk, coconut, and walnuts  - stirring constantly, boil for 1 minute.
Spread on top of cake.
Broil 6" from heat for 3 minutes.

Serves 15

Basic Brownies

Ingredients:
1 1/3 cup flour
2 cups sugar
¾ cup baking cocoa
1 tsp baking powder
½ tsp salt
2/3 cup veg oil
4 eggs (beaten)
2 tsp vanilla
1 cup chopped nuts
Directions:
Preheat oven to 350º F. Lightly spray a 9x13 pan.
In a mixing bowl, combine the flour, sugar, cocoa, baking powder and salt.
In another bowl, combine the oil, eggs, and vanilla.
Add the wet ingredients to the dry ingredients. Mix until JUST combined – do not over mix.
Spread into the pan and sprinkle with nuts.
Bake for 20 minutes.

Gma T's: Honey Chocolate Glaze

My grandmother, about 2 years ago, gave me her box of recipes. She passed away April 14th, 2015. My goal this year is to get as many of her recipes onto my Cooking Blog so that I can share them with all interested family and friends.

* From a newspaper clipping 

The shiniest of glazes; it tastes of butter and chocolate. It may be made ahead and reheated gently when needed.
Ingredients:
4oz unsweetened chocolate
4oz sweet chocolate or 2/3 c sweet chocolate chips
8 tbsp (1 stick or 1/2 c) softened butter
2 tbsp honey
Directions:
Place chocolates in a small saucepan, then set in a larger pan of simmering water. Stir frequently until almost melted, then remove from the water and continue stirring until melted and perfectly smooth.
Beat in the butter 1 tbsp at a time. Stir in the honey.
Let the icing cool a bit.
It should be neither cool enough to hold its shape nor so runny that it will off the cake.
Makes 1 cup.

Gma T's: Spicy Applesauce Cake

My grandmother, about 2 years ago, gave me her box of recipes. She passed away April 14th, 2015. My goal this year is to get as many of her recipes onto my Cooking Blog so that I can share them with all interested family and friends.

*typed out on a small index card - front and back  

Ingredients:
2 cups flour (all purpose)
1 1/2 c sugar
1 tbsp baking cocoa
1 1/2 tsp baking soda
1 tsp each: cinnamon, nutmeg, allspice, salt and cloves
1/2 c shortening
2 cups applesauce
2 eggs (lightly beaten)
1/2 c semisweet chocolate chips
1/2 c chopped walnuts
1 c raisins

Topping:
1/2 c semisweet chocolate chips
1/2 c chopped walnuts
2 tbsp brown sugar


Directions:
In a mixing bowl, combine dry ingredients. Add shortening, applesauce and eggs - beat until well mixed.
Stir in chocolate chips, walnuts and raisins. Pour into greased casserole dish (9x13).
Combine topping ingredients and sprinkle over batter.
Bake at 350* for 35-40 minutes or until cake tests done.
Yields: 20-24 servings

Gma T's: "Breakfast, the Meal You Drink"

Ingredients:
1 c orange juice (not Tang)
1/2 avocado
4 Tbsp protein Powder
1 tsp raw sugar
1/2 tsp cinnamon
ice cubes

Directions:
Blend on high speed all together. Take daily to help maintain or lose weight.

Elaine's Frozen Strawberry Jam

Ingredients:
2 cups strawberries
4 cups sugar
1 box Sure Jell

Directions:
Puree 2 cups of fresh strawberries in blender. Stir sugar into fruit. Set aside for 10 minutes, stirring occasionally.
Stir 1 box Sure Jell Fruit Pectin and 3/4 cups water in small saucepan.
Bring Mixture to boil on high heat, stirring constantly.
Boil and stir 1 minute. Remove from heat.
Stir pectin mixture into fruit/sugar mixture. Stir constantly until SUGAR is COMPLETELY dissolved and is no longer grainy in texture. (about 3 minutes)
Pour quickly into clean jars or plastic containers.
Wipe off edge an cover with lids.
Let stand at room temperature for 24 hours to set.
Store in refrigerator for up to 3 weeks or in the freezer for up to a year.

Gma T's: Bran Muffin Mix

My grandmother, about 2 years ago, gave me her box of recipes. She passed away in April, on the 14th, 2015. My goal this year is to get as many of her favorites onto my Cooking Blog so that I can share them with all interested family and friends.

* This recipe looks to be typed with a computer and printed off.

Keeps for 6 weeks                               375* oven                                    Makes 1 gallon
Ingredients/Directions:
Mix 2 c Nabisco All Bran and 2 c boiling water
Cream together 2 1/2 c sugar, 1 c shortening
Sift together 5 cups flour, 5 tsp baking soda, 1 1/2 tsp salt.
Add 4 eggs - one at a time to shortening mixture
Add 1 qt buttermilk
add 4 c Kelloggs All Bran, 1 # dates
Fold until moist.
Store in covered container in the fridge
Bake at 375* for 20 minutes.
Do not stir again after storing.
Spoon into tins

Gma T's: Punch

My grandmother, about 2 years ago, gave me her box of recipes. She passed away in April, on the 14th, 2015. My goal this year is to get as many of her favorites onto my Cooking Blog so that I can share them with all interested family and friends.
HAPPY 4th of JULY!! This is by far one of my favoritest holidays - and not just because it is my birthday!! I love the whole patriotism, flag and Americana that comes with this Holiday!

Ingredients:
3 pkgs strawberry kool-aid (or generic)
3 c sugar
3 qt water
1 46oz pineapple juice


Add 2 qt ice cold ginger ale when ready to serve. Serves 35

Gma T's: Sangria

My grandmother, about 2 years ago, gave me her box of recipes. She passed away April 14th, 2015. My goal this year is to get as many of her recipes onto my Cooking Blog so that I can share them with all interested family and friends.

* This recipe comes from a magazine - cut and glued to a large index card 

Ingredients:
1 lemon
1 lime
1 Tbsp brandy extract
1 can strawberry soda
1 can wild raspberry soda
1 can lemon-lime soda
2 Tbsp lemon juice
4 tsp sugar
2 cups cold club soda
ice cubes or ice ring in punchbowl is used

Directions:
Slice the lemon and lime and combine with all of the ingredients minus the club soda and ice.
Let stand in refrigerator several hours or overnight. Just before serving add chilled club soda and ice.
Serves 6-8 people

Pork Balls

I just recently found this recipe and I want to get it recorded so I can try it!! :) 

Ingredients:
2 small onion - finely chopped
24oz lean pork
4 thick slices of bread from a small loaf
4 egg yolk
salt and pepper
4 can condensed cream of tomato soup
1 can of water
Optional: 3 cloves of finely grated garlic 


Directions:
You can put the meat through a mincer for a smoother texture. Make the meatballs by: soaking bread in water and then squeezing it out. Add it to the pork, onion, egg yolk, (optional Garlic), salt and pepper. Roll the mixture into large  balls (about 2 inches in diameter). Mix the tomato soup and water and bring to boil. Drop the pork balls into this sauce and simmer for 45 minutes.

Gma T's: Pineapple-Banana Shake-up

* This recipe came from a newspaper or a magazine. - cut and glued to a larger index card 

Ingredients/Directions:
 Combine in a blender:
1 1/2 c pineapple juice
1/2 c dry-milk solids (???)
1 ripe banana, sliced

Cover and blend on high. Uncover and add 2 scoops of vanilla ice cream or pineapple sherbet - while blending

Pour into tall glasses - makes 2.

Gma T's: Green Punch

* Again, the recipe is handwritten by my great grandmother Lela Williams on an index card. This recipe is attributed to Edna Griffin.  

Ingredients:
4 envelopes lime Kool-aid
2 (6oz) cans frozen orange juice
2 6oz cans frozen lemon juice
Add water as directed on cans
1 46oz can pineapple juice
4 qts water
4 c sugar
1/4 tsp almond extract
2 large ginger ale or 7Up (to be added last)
