Frog Eye Salad

Frog Eye Salad

1 cup acini de pepe noodles (they look like tiny balls of pasta)
1 small package pistachio pudding mix
1 8 oz. Container of Cool Whip
1 can of mandarin oranges
1 cup chopped pineapple
1 cup mini marshmallows (optional)

Cook acini de pepe according to package directions. Drain and rinse with cool water. While noodles are cooking prepare pistachio pudding according to the package directions in a large bowl. Place in the refrigerator to thicken. When noodles are cooked and cooled add them to the pistachio pudding. Add the cool whip and fruit. Mix together well. Keep refrigerated until ready top serve. Leftovers can be saved for up to three days.

Chicken Divan

Ingredients:
2-4 cups chopped cooked chicken
4-6 cups fresh or frozen broccoli
1 can Cream of Mushroom Soup (I like Cream of Celery or Onion too)
1 can Cream of Chicken Soup
1 soup can of Milk
1/2 cup of Mayo
1 tsp. Lemon juice
1 tsp-1 tbs curry (to taste)
1 tsp Black Pepper
2 Cups Shredded Cheese
3 slices bread, toasted and crumbled (bread crumbs)
 
 
Directions:
 
Steam the broccoli to give it a head start in baking. In a large bowl, mix the soups, milk, Mayo, curry and pepper. Stir in the cooked chicken, broccoli and cheese. Top with bread crumbs and more cheese if desired. :) Cover and bake at 350 degrees until bubbly for about 30 minutes.

I got this recipe from my good friend Sophia. It sounded so yummy that I had to try it. I definitely recommend it!! :) YUM!!

Peach Pie Recipe

Just thought I would share a yummy recipe I just got from a friend. :) Not sure if it works in the "nutritional" department but it sure works in the YUMMMMMM-OOOOOh department!! :) Fast and easy and no bake and the children can easily help do it.
Peach Pie (you can substitute with any fruit combo)
Crush 3/4 package of Pecan Sandies Cookies & mix with 1/2 stick of butter. Press into pie plate.
Slice enough peaches to fill shell (can use canned or 7-8 peaches). Mix 1 can Eagle Brand milk with 1/4 cup lemon juice until thick. Then pour on top of sliced peaches. Whipped cream on top and VOILA!! Easy yummy FHE dessert or Company dessert.
A few extra tips:
* Mix the milk and juice first so that you can pour it directly over the peaches before they turn colors.
* I usually serve the slice of pie with more cookie crumbs sprinkled on top. :)
