Cherry Cream Cheese Bars

Ingredients:
 1 cup butter (softened)
2 cups sugar
1 tsp salt
4 eggs
1 tsp vanilla extract & 1/2 tsp almond extract
3 cups flour
1 tsp baking powder
2 cans (42 oz) cherry pie filling
Cheesecake Layer:
1 8oz pkg  cream cheese (softened)
1/4 cup sugar
1 egg
 Glaze: 
1 cup powdered sugar
1/2 tsp vanilla and almond extracts
2-3 tbsp milk

Directions:
 Preheat oven to 350 degrees
With your mixer, cream together butter, sugar and salt until light and fluffy. Add in the eggs one at a time. Beating well after each addition. Add in the extracts and then gradually add in the flour and baking powder.
Spread about 2 1./2 cups of this batter into a greased 15x10x1 baking sheet.
In a medium bowl beat together cream cheese, sugar and egg. Add this on top of first layer of batter. Then spread out the cherry pie filling.
Drop the remaining batter by spoonfuls over the filling. Bake for about 35-40 minutes or until golden brown. Cool in pan on a wire rack.
Once the bars have cooled, glaze with mixture  - powdered sugar, extracts and enough milk to reach drizzling consistency. Drizzle over top of bars.

Veggie Pizza / Fruit Pizza

Veggie Pizza
Ingredients:
1/4 cup mayonnaise                                               12 oz cream cheese (softened)
6-7 shakes garlic powder                                        3 shakes oregano (or italian seasoning)
1/3 cup chopped green onion

Crust: 2 pkg Pillsbury Crescent rolls
Directions:
1) Unroll, press rolls flat on cookie sheet (large)
2) Bake at 300 degrees until yellow (approximately 10 minutes)
3) Cool
4) Spread with Cream Cheese Mixture
5) Top with shredded cheese, broccoli, canned diced tomatoes (soaked in garlic and oregano)
6) Enjoy!

Fruit Pizza
Ingredients:
1 8oz cool whip                                          1 8oz cream cheese (softened)
2 tbsp lemon juice                                      1 cup strawberry (or raspberry) jam

Crust: 2 pkg Pillsbury Crescent rolls
Directions:
1) Unroll, press rolls flat on cookie sheet (large)
2) Bake at 300 degrees until yellow (approximately 10 minutes)
3) Cool COMPLETELY!!!
4) Spread with Cream Cheese Mixture
5) Top with kiwi fruit, strawberries, bananas, pineapple, pears, peaches - whatever your favorite fruits are!
6) Enjoy!

Gma T's: Frozen Pops

My grandmother, about 2 years ago, gave me her box of recipes. She passed away in April, on the 14th, 2015. My goal this year is to get as many of her favorites onto my Cooking Blog so that I can share them with all interested family and friends.

*  Typed out on cardstock 

Ingredients:
 1/3 cup honey
1 (6oz) orange juice concentrate
1 (10oz) pkg frozen strawberries
2 cups apple juice

Directions:
 Whip all ingredients in a blender. Pour into paper cups or plastic molds. Then FREEZE
Make up your own: change out the types of frozen juice and berries - the other ingredients stay the same

Gma T's: Fruit Compote

My grandmother about 2 years ago, gave me her box of recipes. It is a small 2-drawer filing box and one side is completely full of recipes. Some of these recipes she has hand written and some are cut out of boxes, people have given to her, etc. My goal this year is to get as many of her favorites onto my Cooking Blog so that I can share them with our entire family and my Friend Camille. 

*Hand written on card stock

Ingredients:
 Apricots (cut up)
apples with skins on
raisins
craisins
prunes
grapes
any fruit you want

Directions:
Cook apricots while cutting and adding other fruits. Bring to a good boil. Turn off heat.
Keep lid on and leave overnight.
Ready to serve.
Will refrigerate well.

Strawberry Fruit Dip

Ingredients:
1 8oz cool whip
2 tbsp lemon juice
1 8oz cream cheese
1 cup strawberry jam

Directions:
1) Mix all ingredients together
2) Enjoy with any fruit or quick breads :) Even delicious on a toasted bagel!!  (just sayin'!!)

Gma T's: Chocolate Fondue

*written on note card - NOT Grandma's handwriting
Ingredients:
 1/2 c evap milk
3/4 cup sugar
1/4 c butter
dash salt
1-2 squares unsweetened chocolate
5 large marshmallows

Directions:
Melt on low heat. Pour into fondue pot.

Dippers: bananas, apples, pineapple, any fruit slices, crackers, etc.

Salad

Strawberry Dressing

Ingredients

  • 1 cup strawberries, (6 large berries), rinsed, hulled and sliced
  • 1 tablespoon balsamic vinegar
  • 3/4 teaspoon freshly ground pepper
  • 1/2 teaspoon sugar
  • 1/4 teaspoon salt
  • 2 tablespoons almond oil, (see Note) or canola oil

Directions

Puree it all together.

Strawberry Vinaigrette

Ingredients

  • 3/4 cup olive oil
  • 1/3 cup cider vinegar
  • 1/3 cup honey
  • 1 teaspoon pepper
  • 1/4 teaspoon salt
  • 3 cups sliced fresh strawberries, divided
  • 3/4 cup pecan halves, divided
  • 12 cups torn mixed salad greens or chopped fresh spinach
  • 1 can (11 ounces) mandarin oranges, drained
  • 3 green onions, sliced

Directions

In a blender, combine the first five ingredients; cover and process for 30 seconds. Add 2 cups strawberries; cover and process until blended. Add 1/4 cup pecans; pulse until chopped.

In a large bowl, combine the spinach, oranges, onions and remaining strawberries and pecans. Drizzle with vinaigrette and toss to coat.

Apple Strudel

 

Ingredients

APPLE FILLING

6 c apples, peeled and sliced

1/2 cup flour

1 c sugar

1 tsp  cinnamon

CRUST

3 3/4 c flour

1/2 tsp salt

1 Tbsp sugar

1 1/2 c shortening

2 eggs yolks plus water to equal 1 cup , reserve 1 egg white.

ICING/FROSTING

1 c powdered sugar

2 Tbsp milk or light cream approximately

1/2 tsp vanilla extract

 

Directions

1 Mix apple slices, sugar, 1/2 cup flour and 1 tsp cinnamon for the filling. Set aside.

2 Mix the remaining ingredients as pie crust, reserve 1 egg white. Divide dough in two pieces. Roll out 1/2 of the dough to fit a 10x15 inch jelly roll pan with sides.

3 Cover with apple mixture. Roll out top crust. Cover with top crust. Brush top with egg white. Slit crust. Bake at 350 for 45-60 min.

4 Mix 1 cup powdered sugar and 1/2 tsp vanilla with enough cream or milk to make thin frosting. Mix well and spread over hot crust.

This is on my to Make list for today!

Fruity Chicken Salad

Combine in large bowl:
6 cups cooked, chopped chicken or 2 cans of canned chicken breast 
16 oz. cookbow-tie macaroni 
1/4 cup green onions
In separate bowl, mix:
2 cups mayonaise (not miracle whip) 
16 oz. coleslaw dressing
Juice from pineapple listed below.
Mix and chill.   Add:
1 can pineapple tidbits
1 cup diced celery
2 cups green and red seedless grapes
2 small Fuji apples, chopped and diced
1 small bag slivered almonds
Best if the pasta and dressing mixes are combined the night before.  Add the rest before serving.

No Bake Banana Split Cake Dessert

Yield: 12 to 16 servings

Prep Time: 30 minutes

For the Crust:

2 cups graham cracker crumbs
½ cup unsalted butter, melted

For the Cream Cheese Layer:

12 ounces cream cheese, at room temperature
¼ cup granulated sugar
8 ounces COOL WHIP Whipped Topping

For the Fruit & Toppings:

3 to 4 bananas, sliced
1 (20-ounce) can crushed pineapple, drained well
16 ounces strawberries, hulled, and sliced
8 ounces COOL WHIP Whipped Topping
½ cup walnuts, chopped
Chocolate syrup
Maraschino cherries

Directions:

1. Grease a 9×13-inch baking dish; set aside.

2. In a medium bowl, combine the graham cracker crumbs and melted butter, stirring until all of the crumbs are evenly moistened. Dump the crumbs into the prepared pan and press into an even layer. Refrigerate while you prepare the next layer.

3. In a medium bowl, mix together the cream cheese and sugar on medium speed until light and fluffy, about 3 minutes. Using a rubber spatula, fold in the COOL WHIP until thoroughly combined. Spread the cream cheese mixture on top of the graham cracker crust.

4. Arrange the banana slices in a single layer on top of the cream cheese filling, top with an even layer of the crushed pineapple, and then an even layer of the sliced strawberries.

5. Cover with the COOL WHIP, smoothing the top. Sprinkle with the chopped walnuts, then drizzle with chocolate syrup and top with maraschino cherries. Refrigerate for at least 4 hours, or overnight.

Fruit Spring Rolls

Ingredients

1 1/3 cups diced fresh strawberries

1 1/3 cups fresh blueberries

1 1/3 cups diced banana

1/2 cup unsweetened shredded coconut

1/4 cup powdered sugar

2 teaspoons fresh lemon zest

2/3 cup yogurt cheese

16 egg roll wrappers

 
How to make it

In a medium glass or ceramic bowl, combine strawberries, blueberries, bananas, coconut, powdered sugar, and lemon zest. Mix well.

Add yogurt cheese and mix again.

Place an egg roll wrapper on a work surface so it makes a diamond shape.

Place 2 tablespoons of the fruit mixture in a line in the bottom third of the egg roll wrapper.

Fold up the bottom corner and then fold in the left and right corners like an envelope.

Dip your finger in water and “paint” water on the remaining top edge of the diamond.

Continue rolling up the wrap and press lightly along edges to seal. Repeat with remaining wrappers and filling.

Fry at 350ºF in an electric skillet in about one inch of oil. Cook for a few minutes, until golden brown, turning to brown both sides.

Remove and drain on paper towels. Serve warm.

Key Lime Bites

Ingredients

    • 1 cup butter, softened
    • 1/4 cup confectioners' sugar
    • 2 teaspoons key lime juice
    • 2 teaspoons grated key lime peel
    • 2 cups all-purpose flour
    • 1/4 teaspoon salt
    • 1/2 cup chopped macadamia nuts

ICING:

    • 2 cups confectioners' sugar
    • 1/4 cup key lime juice
    • 1 teaspoon grated key lime peel

Directions

    • In a large bowl, cream butter and confectioners' sugar until light and fluffy. Beat in lime juice and peel. Combine flour and salt; gradually add to creamed mixture and mix well. Stir in nuts.
    • Shape into 1-in. balls. Place 2 in. apart on ungreased baking sheets; flatten slightly.
    • Bake at 400° for 8-10 minutes or until bottoms are lightly browned. Remove to wire racks to cool completely.
    • In a small bowl, combine the icing ingredients. Dip cookies in icing; allow excess to drip off. Place on a wire rack; let stand until set. Store in an airtight container. Yield: 2-1/2 dozen.

Cherry Cake with Cherry Cream Cheese Frosting

Ingredients:

1 box white cake mix
2 large eggs
1 teaspoon baking powder
1 teaspoon vanilla extract
1 teaspoon almond extract
1 (21 oz) can homemade cherry pie filling (or canned), divided

Directions:

Preheat oven to 325 degrees. Spray or lightly grease 13 x 9 baking pan.
Measure 1/3 cup of cherry pie filling and set aside to use in frosting.
Mix together on medium speed, dry cake mix, eggs, baking powder, both extracts, and remaining cherry pie filling until well blended.
Pour batter into pan, and level with a spatula.
Bake for 45 minutes or until toothpick comes out clean. Remove cake from oven and allow to cool completely in pan. Frost with cherry cream cheese frosting.

Cherry Cream Cheese Frosting

Ingredients:

2 8-oz packages of cream cheese
1 stick (1/2 cup) unsalted butter
1/3 cup cherry pie filling
2 - 2 1/2 cups powdered sugar
1 teaspoon almond extract
1 teaspoon vanilla extract

Directions:

Soften the cream cheese and butter, but don't let it get warm, just take the chill off. Beat the cream cheese and butter together until creamy. Add in the cherry pie filling and extracts and beat for a minute or two until cherries are broken into small pieces. Slowly add the powdered sugar until completely combined and of spreading consistency. Keep refrigerated until ready to use.

Tammy’s Cranberry Tabouleh Salad

Ingredients

  • 2 cups hydrated bulgur wheat
  • 1/2 cup chopped fresh parsley
  • 1/2 cup grape tomatoes cut in 1/2
  • 1/4 cup chopped cilantro
  • 2 tablespoons chopped fresh mint
  • 4 ounces virgin olive oil
  • 4 ounces fresh lemon juice
  • Salt and pepper
  • 1/2 pomegranate Cranberry (dried)
  • 1/2 cup diced cucumber

Directions

Toss everything together in a bowl and add salt and pepper to taste. Let salad sit for about an hour before serving

**This is what I am fixing for our Christmas Dinner on Christmas Day. I am going to make it up on Saturday and let the flavors combine. MMM MMM MMMM good!! Can’t wait!**

Velvet Fruit Salad

8 ounces softened cream cheese

1  instant vanilla pudding mix

18 ounces blueberry yogurt

1 large tub of Whipped cream

Beat cream cheese with the pudding mix and add yogurt and blend well. Fold in whipping cream and fruit.

2 cups strawberries, washed and sliced

2 cups grapes

1 apple, diced

2 bananas sliced

Blueberry French Toast Bake

Blueberry French Toast Bake
*You could use frozen raspberries in this super simple brunch recipe too.
*Prep Time: 25 minutes
Cook Time: 25 minutes
Ingredients:
· 1/2 cup flour
· 1-1/2 cups whole milk
· 2 Tbsp. sugar
· 1 tsp. vanilla
· 6 eggs
· 10 slices french bread, cut into 1" cubes
· 3 oz. pkg. cream cheese, diced
· 1 cup fresh or frozen blueberries (if frozen, do not thaw)
· 1/2 cup chopped nuts
· 2 Tbsp. sugar
· 1/2 tsp. cinnamon
Preparation:
Generously grease 13x9" glass baking dish. Beat flour, milk, 2 Tbsp. sugar, vanilla and eggs in large bowl until smooth. Stir in bread cubes until well coated, then pour bread mixture into prepared pan.Top evenly with cream cheese cubes and blueberries.
In small bowl, combine 2 Tbsp. sugar, cinnamon, and nuts and toss to mix. Sprinkle over blueberries and cream cheese. Cover casserole tightly and refrigerate up to 24 hours.Preheat oven to 400 degrees F and bake casserole, uncovered, for 20-25 minutes until golden brown. Serves 8
