Gma T's: Hawaiian Wedding Cake

My grandmother, about 2 years ago, gave me her box of recipes. She passed away April 14th, 2015. My goal this year is to get as many of her recipes onto my Cooking Blog so that I can share them with all interested family and friends.

* This was typed out and printed on typing/copy paper 

Ingredients:
2 c flour
1/2 tsp salt
1 1/2 c sugar
3 tsp soda
1/2 c oil
1 tsp vanilla
2 eggs


 20 oz can undrained pinapple*
1 c chopped nuts


Directions:
Mix above ingredients by hand (no mixer required).
Pour into greased and floured 9x13 pan.
Bake for 1 hour at 325*
Top with whipped cream (not cool whip) - do 1 cup heavy cream, 2 tsp vanilla, and 4 tbsp powdered sugar - to taste - whipped until the proper consistency. Then dollop or spread on cake or on each individual piece as you serve it.

Gma T's: Beef Burgers Ranchero

My grandmother, about 2 years ago, gave me her box of recipes. She passed away in April, on the 14th, 2015. My goal this year is to get as many of her favorites onto my Cooking Blog so that I can share them with all interested family and friends.
Ingredients:
1 lb ground beef                                1 tsp salt
1/8 tsp pepper                                1/2 cup chili sauce
2 tbsp sliced green olives (stuffed)    1 tsp minced onion
1 tsp chili powder                             4 hamburger buns

Directions:
In large bowl, combine beef, salt and pepper. Blend well. Shape into 4 patties. Place patties on grill. Grill on both sides until browned and of desired doneness.
Combine remaining ingredients (minus buns) in a small sauce pan. Bring to boil. Serve sauce over meat on the buns.

Basic Pizza Dough aka New York Style Pizza Dough

This dough was simple to make and very delicious. I would use it for a tasty garlic bread as well. 
Ingredients:
2 tbsp yeast
1 cup warm water (not hot - just very warm)
1/2 tbsp sugar
2-3 cups of flour (as needed)
2 tbsp olive oil
1 1/2 tsp salt

Directions:
 1. Add the water, yeast, sugar and 1/2 cup of the flour into a mixing bowl. Stir well and let sit until bubbly (up to 20 minutes)
2. Add olive oil, salt and 2 cups of the flour. Knead for 10 minutes. Add more flour as needed - dough should be sticky and 'wet' but loose enough to pull from bowl and add to a oiled bigger bowl - make sure to oil the top of the dough as well - to allow it to rise. - up to 2 hours until it is doubled. I put mine on the oven, covered with a tea towel, that oven had been pre-heated to 350* and it rose within 20 minutes.
3. Divide the dough into 2 balls. At this point you can continue to make your pizza OR you can place the balls into a ziploc baggie and refrigerate over night or freeze.
4. When ready to use, remove from fridge and allow to come to room temperature before using.
5. Continue making your pizza - with whatever toppings that you want.
6. Have your oven pre-heated to 425*. Bake your pizza for 8-15 minutes depending on the thickness of your crust. If you want a crunchier crust - make it thinner. You can sprinkle corn meal on your pizza pan for easy removal and an authentic taste. If you want a softer crust, make it thicker and put parchment paper down on the cookie sheet.

Homemade Pizza Sauce

This is a delicious sauce - we loved it. I would use for a loose red sauce for pasta and for pizza. You can leave the tomatoes chunkier if you like it chunky but I did the tomatoes, onion and garlic in the food processor. It was still a bit chunky-ish - but only small pieces. We loved it. Such a great compliment to the delishy 'new york style' pizza dough recipe that we used, as well. 
Ingredients
1 can (28-ounces) whole peeled tomatoes, in juice
1 small white or sweet onion, finely diced and minced
2 clove garlic, peeled and minced
1 tbsp Italian seasonings - basil, rosemary, oregano, 
pinch of cayenne powder or 1/2 tsp red pepper
Pinch salt
Pinch fresh ground black pepper
Pinch sugar, optional
2 tablespoons olive oil, to saute

Directions
Empty the contents of the tomato can in a mixing bowl and coarsely crush the tomatoes with a fork or your hands, leaving them just a little chunky.
 In a heavy bottom 2-quart saucepan, add the olive oil, over a medium high flame and heat a little. 
Add the onions and saute until slightly translucent. Add the garlic and saute about a minute until golden. OR alternately, you can pulse them in the food processor until unrecognizable - should you have picky non-veggie eaters at your home.

 Quickly add the crushed tomatoes to the mix. Stir well and bring to a simmer. 
Season with salt and pepper, to taste, and add the fresh basil and oregano or the Italian seasonings.

 You can add a touch of sugar if desired or if tomatoes are tart. (I used 1 tsp). OR alternately you could grate, finely, a carrot into the sauce. Carrots are a natural sweetener. I usually add it to my red sauces.
Simmer on a low flame, stirring often for at least 15 minutes. 
If not using right away, cool down and store in airtight container in the refrigerator, up to 1 week.

Gma T: Have a Cookie! It's Breakfast!

My grandmother, about 2 years ago, gave me her box of recipes. She passed away in April, on the 14th, 2015. My goal this year is to get as many of her favorites onto my Cooking Blog so that I can share them with all interested family and friends.
Ingredients:
1 1/4 C flour                                                         1/2 c soft margarine (softened butter)
2/3 c sugar                                                          1 egg
1/2 c Grapenuts cereal                                          2 tbsp frozen orange juice thawed concentrate
1 tsp baking powder                                             1 tbsp grated orange peel
1/2 lb bacon, crumbled and cooked

Directions:
Mix flour, cereal, and baking powder. When well mixed add remaining ingredients. Mix well.
Drop by teaspoons full (2 inches apart) on ungreased cookie sheet.
Bake at 350* for 10-12 minutes or until edges of cookies are lightly browned.

GMA T: Honey Whole Wheat Bread

My grandmother, about 2 years ago, gave me her box of recipes. It is a small 2-drawer filing box and one side is completely full of recipes. Some of these recipes she has hand written and some are cut out of boxes, people have given to her, etc. She passed away on April 14th, 2015. My goal this year is to get as many of her favorites onto my Cooking Blog so that I can share them with our entire family and my Friend Camille - whom was EQUALLY excited about my receiving this box of treasure as I was.

*This first recipe is from Cari Hellman - I do not know why this recipe was in the box or who she is. I am currently researching this information. :) I thought she was a cousin - but I was wrong.


Prep Time: 3 hours            Serving: 4 9x5 loaves

Ingredients:
4 tbsp yeast                                                      1/2 cup honey
4 cups warm water                                            2 tsp salt
1/2 cup butter (softened)                                  6 cups whole wheat flour
1/4 cup molasses  or sugar                           4 cups white flour
Directions:
  1. Dissolve yeast and sugar in the warm water
 2. In a large bowl combine butter, molasses, honey and salt - mix well
 3. Add yeast mixture and then gradually add the flours
 4. Turn onto floured surface and knead until smooth
 5. Place buttered bowl (with dough inside) and let rise until double
 6. Punch down and let rest for a few minutes
 7. Divide dough into 4 equal parts and shape into loaves
 8. Place in greased pans and let rise for about an hour
 9. Bake at 375* for 30-35 minutes
10. Butter the tops of the loaves immediately after removing
11. Enjoy!

Lemon Poppy Seed Cake

ITS FINALLY SUMMER!! :) Wahoooooooooooooooooooooooooo!! We online school, so the children are home all of the time - BUT - I LOVE SUMMER TIME! We can fly by the seat of our pants and be random and last minute and completely spontaneous! Love it! This delicious cake is Curtis' all-time favorite!! ;) It is his most requested cake for birthdays and family events. :)

Lemon Poppy Seed Cake
Ingredients:
1 pkg yellow cake mix (I would use Lemon cake mix)
1 pkg lemon pudding (instant)
1 cup thick sour cream
4 eggs
1/2 cup water
1 tsp lemon extract
1/2 cup butter, softened
1/4 cup poppy seeds

Directions:
1) combine all ingredients
2) Beat on medium for 5 minutes
3) Pour into well-buttered and sugared bundt pan
4) Bake at 350 degrees for 45-50 minutes
5) Cool for 15 minutes
6) Turn out on to plate and sift powdered sugar or glaze with lemon juice/powdered sugar glaze.
7) Enjoy!

Cheesey Cheese Ball

Happy Birthday Curtis!! :)

I was lucky enough to attend a wonderfully put together Activity Days activity for the Girls and their Mothers. Taryn and I loved it! The Leader did such an amazing job and shared her recipes with the girls. It was super awesome! This is credited to Elaine Rowley. :)

Cheesey Cheese Ball
Ingredients:
2 bricks (8oz each) cream cheese
1 tbsp pimentos
1 tbsp minced onions
1 tsp lemon juice
2 cups grated cheese
1 t green chilis
2 tsp worchestershire sauce
dash of salt and red chili powder (I would use House Seasoning or our Taco Seasoning mixture)

Directions:
1) Mix all ingredients together
2) Form into a ball and roll in chopped walnuts (we would leave out the nuts due to nut allergies . . . sigh . . .)
3) Makes 2 balls.
4) Enjoy with crackers, chips, cut veggies, etc.

Creamy Jalepeno Dip

What's not to love with this delicious dip. :) My Honey and I were out and about and stopped at a favorite eatery and this is my version of the dip at SomeBurros here in Arizona.

Ingredients:
1 brick of cream cheese (8oz)
1 tbsp (to taste) chipotle in adobo sauce (cut up chipotle's as small as you can or just use the sauce)
1 pinch coriander powder
1/2 cup of finely diced up jarred jalepenos (for nachos) reserve up to 1/4 cup of juice
2 cloves finely minced garlic  (can use roasted garlic)

Directions:
1) place cream cheese in bowl
2) add all other ingredients - add as much of the liquid from the jalepenos as you wish - if you like it 'wetter' or drier - it depends on your preference. We liked it creamy and dippable.
3) mix well
4) enjoy

You can use this as a dip or inside tortilla roll-ups or even as the innards to some delicious enchiladas casserole!
