Gma T's: Citrus Punch

My grandmother, about 2 years ago, gave me her box of recipes. She passed away in April, on the 14th, 2015. My goal this year is to get as many of her favorites onto my Cooking Blog so that I can share them with all interested family and friends.

* Another recipe handwritten on an index card by my Great Grandmother Lela Williams. This one is attributed to Robert (& I can't decipher the last name well enough to type it here) 

Ingredients:
1 46oz pineapple juice
4 cans frozen lemonade (with water)
2 cans frozen orange juice (with water)
2 quarts gingerale
3/4 c sugar

Directions:
Mix all ingredients together then add the gingerale just before serving

Make it a great one!!

Pineapple Cheese Ball

Ingredients:
2 8oz cream cheese                        1 cup crushed pineapple (well drained)
1/4 cup chopped green onion           1/4 cup chopped green chilies
1/tsp house seasoning or seasoned salt

Directions:
1) Mix all ingredients together
2) Roll in chopped nuts (or shredded coconut if nut allergies)
3) Makes 3 balls
4) Enjoy!

Gma T's: Jello Punch

My grandmother, about 2 years ago, gave me her box of recipes. She passed away in April, on the 14th, 2015. My goal this year is to get as many of her favorites onto my Cooking Blog so that I can share them with all interested family and friends.

*Again, handwritten by my great grandmother, Lela Williams on a small index card. It is attributed to "Aunt Thelma".  

Ingredients:
1 box cherry jello (or any kind)
1 c hot water (to dissolve jello in)
add 3 c cold water
Then add the juice of 3 lemons (or 1/2 of 1 can frozen lemon juice)
Add sugar to taste
Add 1 small bottle of 7up - ice cold - just before serving.

Note: 1 small can of frozen lemon juice equals 6 lemons.

Gma T's: Evergreen punch

My grandmother, about 2 years ago, gave me her box of recipes. She passed away in April, on the 14th, 2015. My goal this year is to get as many of her favorites onto my Cooking Blog so that I can share them with all interested family and friends.

*This recipe was handwritten by my Great Grandmother, Lela Williams on a small index card. The recipe is attributed to Faye Murdock. I am assuming she lived in Devine, Texas near my Great Grandmother.   

Ingredients:
1 envelope Lime Kool Aid
1 qt gingerale
1 4oz can pineapple juice
2 c sugar
2 qts water

Directions:
Again, no directions - so just mix together and enjoy!

Gma T's: Sunshine Punch

*This recipe is handwritten by my Great Grandmother Lela Williams. I recognize her handwriting. It is on a small index card.   

Ingredients:
1 6oz frozen orange juice concentrate
1 6oz frozen lemonade concentrate
1 6oz frozen limeade concentrate
4 c cold water
1 large bottle (3-4 cups) gingerale

Directions:
No directions were written. I imagine you mix together and stir and enjoy! :)

Gma T's: Orange Julius

Ingredients:
1 6oz orange juice concentrate
1 c water
1 c milk
2 tsp vanilla
3 tbsp honey
12 ice cubes

Directions:
Blend orange juice, milk, vanilla, water, honey together then add the 12 ice cubes and blend again.

Makes 4 8oz servings.

Gma T's: An Egg*Citing New Brunch Idea

My grandmother, about 2 years ago, gave me her box of recipes. She passed away in April, on the 14th, 2015. My goal this year is to get as many of her favorites onto my Cooking Blog so that I can share them with all interested family and friends.

Happy Birthday Jinelle! :) 

* Typed out on cardstock 

Ingredients:
 3 medium onions
 2 tbsp butter
2 tbsp olive oil
3 med unpeeled zucchini (coarsely chopped)
1 med green pepper (cut in thin strips)
1 med red pepper (cut in thin strips)
3/4 minced cooked ham (or mild salami)
2 c canned Italian plum tomatoes (drained and chopped)
2 tsp dried basil
8 eggs
1/4 c grated parmesan cheese
1/4 c chopped parsley (&/or cilantro)
Salt & pepper to taste

Directions:
 Saute' onions in butter and oil until 'limp'. (yum!) Add zucchini, peppers and ham.
Cook over medium heat until wilted. Add tomatoes - mix well and cook until most of the liquid evaporates. Place into casserole dish. With the back of spoon make nests for the egg to sit. Drop a raw egg into each nest.
Bake at 350* for 20 minutes or until whites are set and yolks are still runny. Sprinkle with cheese and parsley or cilantro and serve. Makes 4 servings. (2 eggs per person)

Gma T's: Breakfast Tostadas

My grandmother, about 2 years ago, gave me her box of recipes. She passed away in April, on the 14th, 2015. My goal this year is to get as many of her favorites onto my Cooking Blog so that I can share them with all interested family and friends.

* Typed out onto cardstock  

Ingredients:
 1/4 c flour
 1 tbsp baking powder
3/4 c yellow cornmeal
1/2 tsp salt
2 tsp sugar
1/2 cu boiling water
1/4 cup each: milk, melted butter or oil
1 egg
1 1/2 c shredded lettuc
1 c chopped tomato
1 lg avocado, pitted and sliced
Crispy, crumbled bacon
6 or 7 eggs - Softly fried or poaced - I would do boiled ;)
fresh cilantro
pickled hot chilis
Directions:
Sift flour, baking powder. In another bowl combine cornmeal, salt and sugar.
Pour in boiling water - stir well.
Blend in milk, butter and egg yolk.
Ad flour mixture; blend well.
Stiffly bet egg white; fold into batter
Use 1/2 c batter for each pancake. Cook until brown on both sides.
To assemble - place pancake in plate and top with garnishes of choice (bacon or sausage, onion, lettuce, tomato, cilantro, avocado, olives, egg, cheese etc.)

Veggie Pizza / Fruit Pizza

Veggie Pizza
Ingredients:
1/4 cup mayonnaise                                               12 oz cream cheese (softened)
6-7 shakes garlic powder                                        3 shakes oregano (or italian seasoning)
1/3 cup chopped green onion

Crust: 2 pkg Pillsbury Crescent rolls
Directions:
1) Unroll, press rolls flat on cookie sheet (large)
2) Bake at 300 degrees until yellow (approximately 10 minutes)
3) Cool
4) Spread with Cream Cheese Mixture
5) Top with shredded cheese, broccoli, canned diced tomatoes (soaked in garlic and oregano)
6) Enjoy!

Fruit Pizza
Ingredients:
1 8oz cool whip                                          1 8oz cream cheese (softened)
2 tbsp lemon juice                                      1 cup strawberry (or raspberry) jam

Crust: 2 pkg Pillsbury Crescent rolls
Directions:
1) Unroll, press rolls flat on cookie sheet (large)
2) Bake at 300 degrees until yellow (approximately 10 minutes)
3) Cool COMPLETELY!!!
4) Spread with Cream Cheese Mixture
5) Top with kiwi fruit, strawberries, bananas, pineapple, pears, peaches - whatever your favorite fruits are!
6) Enjoy!

Gma T's: Honey Marmalade Monkey Bread/Pull Apart Bread

My grandmother, about 2 years ago, gave me her box of recipes. She passed away in April, on the 14th, 2015. My goal this year is to get as many of her favorites onto my Cooking Blog so that I can share them with all interested family and friends.

* Handwritten on a small journal or notebook page

Ingredients:
 1/2c chopped nuts
2/3 c orange marmalade (or any flavor jam or preserve - not jelly)
1/4 cup honey
2 tbsp melted butter or margarine
2 cans refrigerated biscuits

Directions:
 Heat oven to 375*. Grease 9 or 10 inch tube pan or a bundt pan. In small bowl, combine nuts, marmalade, honey and butter. Separate the biscuits and cut each into quarters. Place half of biscuits in prepared pan. Spoon half of marmalade mix over biscuits. Repeat until gone. Top with any remaining marmalade mix.
Bake for 23-27 minutes or until deep golden brown. Invert onto a serving plate.

Gma T's: Bacon and Egg Burritos

My grandmother, about 2 years ago, gave me her box of recipes. She passed away in April, on the 14th, 2015. My goal this year is to get as many of her favorites onto my Cooking Blog so that I can share them with all interested family and friends.

Happy Fathers Day!! I have the most Awesomest Father, the Best Husband/father to my children and the greatest Father in Law. I am truly lucky!!

* typed out on cardstock 

Ingredients:
 10 flour tortillas
8 oz bacon
1 can green chilis
1/4 cup green onions - diced
2 ripe avocados - sliced or diced
1 1/2 c (6oz) shredded cheddar cheese
1/4 c water
salt and liquid hot sauce
Seasoning to taste

Directions:
 lightly moisten tortillas, wrap in foil and heat for 15 minutes in 350* oven.
Cook bacon until tender crisp; drain and crumble.
Discard all but 3 tbsp of the drippings
Beat together eggs, water, salt and pepper seasonings and add to drippings.
Cook over medium heat, lifting cooked portion to allow uncooked portion to flow underneath  -  until eggs are almost set.
Remove from heat; sprinkle with bacon, chilis, onions and cheese
Cover and let stand until cheese melts and eggs are set.
Spoon about 1/10 of eggs into each tortilla - top with avocado then roll up, tucking in sides. Keep Warm

Gma T's: Punch Slush

My grandmother, about 2 years ago, gave me her box of recipes. She passed away in April, on the 14th, 2015. My goal this year is to get as many of her favorites onto my Cooking Blog so that I can share them with all interested family and friends.

Ingredients:
6 cups water
4 cups sugar
5 mashed bananas
1 large can of pineapple juice
1 large can of frozen orange juice
1 12 0z can frozen lemonade

Directions:
 Boil water and sugar and cool. Add other ingredients. Freeze to a slush. To serve: add Ginger-ale over top. -

Gma T's: Fruit Punch

My grandmother, about 2 years ago, gave me her box of recipes. She passed away in April, on the 14th, 2015. My goal this year is to get as many of her favorites onto my Cooking Blog so that I can share them with all interested family and friends.

Ingredients:
 1 cup limeade
4 lemons
1 cup frozen strawberries
1 #2 can crushed pineapple
Directions:
Make heavy syrup with 1 quart water and 2 cups sugar.

Mix all the ingredients together.  FREEZE for at least 4 hours

When ready to use - place in bowl and pour 2 2 liter bottles of ginger-ale over the top.

Gma T's: Frozen Pops

My grandmother, about 2 years ago, gave me her box of recipes. She passed away in April, on the 14th, 2015. My goal this year is to get as many of her favorites onto my Cooking Blog so that I can share them with all interested family and friends.

*  Typed out on cardstock 

Ingredients:
 1/3 cup honey
1 (6oz) orange juice concentrate
1 (10oz) pkg frozen strawberries
2 cups apple juice

Directions:
 Whip all ingredients in a blender. Pour into paper cups or plastic molds. Then FREEZE
Make up your own: change out the types of frozen juice and berries - the other ingredients stay the same

Gma T's: Frappee

My grandmother, about 2 years ago, gave me her box of recipes. She passed away in April, on the 14th, 2015. My goal this year is to get as many of her favorites onto my Cooking Blog so that I can share them with all interested family and friends.

Directions:
 3 c Sugar
6 cups water
 Boil for 3 minutes and then add:
1 tall can pineapple juice
2 cans orange juice
the juice of 2 lemons
3 ripe smashed bananas

Mix well. then freeze.

When ready, break it up in a bowl and add 7up. Takes approximately 4 large bottles. Serves 30.

Gma T's: Snack Mix

My grandmother, about 2 years ago, gave me her box of recipes. She passed away in April, on the 14th, 2015. My goal this year is to get as many of her favorites onto my Cooking Blog so that I can share them with all interested family and friends.

Ingredients:
 1 cup Karo
1 1/2 cubes butter
1 cup sugar
pinch of salt
1/2 tsp baking soda
1 tsp vanilla
1 large box rice chex
2 cups coconut
2 cups sliced almonds

Directions:
 Mix the karo, butter, sugar and salt. Cook the mixture in microwave oven on medium heat for 5 minutes.
Add to the above mix, the baking soda and vanilla
Stir well and pour over the cereal, coconut and almonds
Stir until well coated - spread out on butter

Sugar Cookies

Nothing says fun to kids more than homemade sugar cookies that they can frost and decorate themselves! This is my go-to recipe for sugar cookies - soft, delicious - what more could you ask for?

Sugar Cookies
Ingredients:
4 eggs (beaten with fork)               1 1/3 cup vegetable oil
4 tsp vanilla                                     1 tsp lemon extract
1 1/2 cups sugar                                         5 cups flour
1 tsp salt                                      4 tsp baking powder

Directions:
1) In large bowl cream beaten eggs, oil, vanilla/lemon extract, and sugar
2) Add flour, salt and baking powder
3) Place entire bowl in freezer for 1 hour
4) Roll out dough and cut with cookie cutters
5) bake at 400 degrees or 5-10 minutes (depending on how thick your cookies are)
6) Let cookies cool & frost with cream cheese frosting
7) Enjoy!

Gma T's: Salmon Pate' [or Salmon Cheese Ball]

My grandmother about 2 years ago, gave me her box of recipes. It is a small 2-drawer filing box and one side is completely full of recipes. Some of these recipes she has hand written and some are cut out of boxes, people have given to her, etc. My goal this year is to get as many of her favorites onto my Cooking Blog so that I can share them with our entire family and my Friend Camille. 

*Handwritten on a note card

Ingredients:
 1 can salmon                                                         1 tsp Liquid smoke
1 8oz cream cheese (room temp)                            1 tsp horseradish
1 tsp lemon juice                                                      3 tbsp parsley or 2 tbsp dry parsley
2 tsp grated onion                                                  1/2 cup pecans
1 tsp Mrs. Dash (yellow top)                                   1/2 tsp Season-All

Directions:
 Save part of parsley and pecans for garnish.
Combine all ingredients well. (can use food processor)
Chill for several hours then roll into a ball.
Roll in the remaining parsley and pecans as garnish.

Gma T's: Quick Bread

My grandmother about 2 years ago, gave me her box of recipes. It is a small 2-drawer filing box and one side is completely full of recipes. Some of these recipes she has hand written and some are cut out of boxes, people have given to her, etc. My goal this year is to get as many of her favorites onto my Cooking Blog so that I can share them with our entire family and my Friend Camille. 

* Type written on card stock (with corrections in Grandma's handwriting)

Ingredients:
 2 qts warm water
7 tbsp dry yeast
3/4 cup sugar
3 tbsp salt
1/2 c olive oil
 2 c non-fat dry milk
18 cup flour (unsifted) 6 lbs
     *can be all white flour or half whole wheat/half white or 7 cups wheat and 11 cups white

Directions:
 Dissolve yeast in 1 qt of water, with 1-2 tsp of the sugar.
Mix all dry ingredients. Add yeast mixture and 2nd quart of water. Mix together with part of the flour. Then add the oil and mix well.
Knead dough about 10 minutes. Cover, let rise until double - about 30 minutes.
Work down, shape into loaves and let rise again until almost double in bulk. - about 30 minutes.
Bake in 400* oven 20-35 minutes - according to size of loaves.
Makes 8 or more loaves.

* combination of flours maybe as you choose - more than 5 cups of whole wheat flour slows down the rising process and you may need more liquid.

Gma T's: Chex Patio Mix

My grandmother, about 2 years ago, gave me her box of recipes. She passed away in April, on the 14th, 2015. My goal this year is to get as many of her favorites onto my Cooking Blog so that I can share them with all interested family and friends.

Happy Birthday to our Favorite Son-in-Law, Carl. Thank you for taking such good care of our Jessica and your guys' lil man, Andrew!  We love you!!

* Newspaper clipping glued to cardstock with the name handwritten out 


Ingredients:
 6 tbsp butter/margarine
1 tsp season salt
2 1/2 tsp soy sauce
1/4 tsp onion powder &/or garlic powder
2 cups each: Corn Chex, Rice Chex, Wheat Chex
1 cup pretzel sticks and/or salted nuts

Directions:
 Melt butter in electric skillet at 200*. Stir in seasonings. Blend well. Add cereal and pretzels. Mix until pieces are coated. Cover skillet (leaving lid vents open). Heat at 250* for 15 minutes. Stir midway. Cool on absorbent paper.
Note: a large skillet on the range top may be used. After pieces are coated with the butter mixture, heat and stir for about 10 minutes over low heat; then cool.

Delishy Coffee Cake

*** Adaptation from the Pioneer Woman's Best Coffee Cake. Ever. Recipe.  
Prep Time:  15 Minutes   Cook Time:  45 Minutes      Difficulty:  Easy    Servings:  16
Ingredients:
 FOR THE CAKE:

1-1/2 stick Butter, Softened
2 cups (scant) Sugar
3 cups Flour, Sifted
4 teaspoons Baking Powder
1 teaspoon Salt
1-1/4 cup Whole Milk
3 whole Egg Whites, Beaten Until Stiff
1 tsp vanilla or almond extract or a mixture of both

 FOR THE TOPPING:

1-1/2 stick Butter, Softened
3/4 cups Flour
1-1/2 cup Brown Sugar
2 Tablespoons Cinnamon
1-1/2 cup Pecans, Chopped

Directions:
Preheat oven to 350 degrees. Sift together flour, baking powder, and salt. Beat egg whites and set aside. Cream butter and sugar and vanilla. Add flour mixture and milk - gently combine. Don't over beat. 
Fold in beaten egg whites with a rubber spatula. Spread in a well-greased bundt pan.

In a separate bowl, combine topping ingredients with a pastry cutter until crumbly. Sprinkle all over the top.

Bake for 40 to 45 minutes, or until no longer jiggly.

Serve warm---delicious!

Gma T's: 90 minute Bread

My grandmother, about 2 years ago, gave me her box of recipes. She passed away in April, on the 14th, 2015. My goal this year is to get as many of her favorites onto my Cooking Blog so that I can share them with all interested family and friends.

* Handwritten on card stock

Ingredients:
 4 cups warm water                               8 tbsp sugar
4 tbsp yeast                                          4 tbsp melted shortening or butter
4 tsp salt                                              7-8 cups flour

Directions:
 Dissolve yeast in 1 cup of the water and sugar.
Mix other ingredients and add yeast mixture. It will make a soft but not sticky dough.
Cut into 4 pieces and let stand for 15 minutes.
Pound each piece for 1 minute.
Place in bread pans and let rise for 30 minutes.
Have oven pre-heated to 400*. Bake for 30 minutes.

Gma T's: John Wayne's Favorite Dish

My grandmother, about 2 years ago, gave me her box of recipes. She passed away in April, on the 14th, 2015. My goal this year is to get as many of her favorites onto my Cooking Blog so that I can share them with all interested family and friends.

* Handwritten on a sheet of paper that has been xeroxed. NOT Grandma T's handwriting

Serves about 15

Ingredients:
 1# Monterey Jack Cheese (shredded)
2#'s Sharp Cheddar (shredded)
1/2 onion diced
3 cloves garlic - minced
10 eggs
2 cans green chilies
1tsp Salt
3/4 tsp pepper
1 tsp cumin
2 tsp chili powder
Paprika sprinkled over top

Directions:
 Put diced onion and garlic and the chilis in a bowl.
Separate the eggs - add yolks to the onion/chili mixture. Stir until well blended
Add salt, pepper, cumin and 1/2 tsp of chili powder
Beat egg whites until stiff. Then fold into egg mixture
Sprinkle with paprika and bake at 300* for 40 minutes

Variations:
Add chopped bacon bits or olives, browned beef or sausage. Put in bottom of pan then cover with the egg mixture. 
Instead of diced green chilis use a can of WHOLE green chilis- cover the bottom of the dish with chilis then cover with egg mixture. 
Sprinkle with olives, chopped red peppers or diced roasted red peppers.
YUM!

Gma T's: Fruit Compote

My grandmother about 2 years ago, gave me her box of recipes. It is a small 2-drawer filing box and one side is completely full of recipes. Some of these recipes she has hand written and some are cut out of boxes, people have given to her, etc. My goal this year is to get as many of her favorites onto my Cooking Blog so that I can share them with our entire family and my Friend Camille. 

*Hand written on card stock

Ingredients:
 Apricots (cut up)
apples with skins on
raisins
craisins
prunes
grapes
any fruit you want

Directions:
Cook apricots while cutting and adding other fruits. Bring to a good boil. Turn off heat.
Keep lid on and leave overnight.
Ready to serve.
Will refrigerate well.

Strawberry Fruit Dip

Ingredients:
1 8oz cool whip
2 tbsp lemon juice
1 8oz cream cheese
1 cup strawberry jam

Directions:
1) Mix all ingredients together
2) Enjoy with any fruit or quick breads :) Even delicious on a toasted bagel!!  (just sayin'!!)

Gma T's: Top of the Stove Cookies

My grandmother, about 2 years ago, gave me her box of recipes. She passed away in April, on the 14th, 2015. My goal this year is to get as many of her favorites onto my Cooking Blog so that I can share them with all interested family and friends.

Same as "granny's old fashioned cookies" or Chocolate No-Bake Cookies
Ingredients:
 2 cups sugar
1/3 cup cocoa
2 tsp vanilla
1/2 c margarine/butter
1/2 c milk
1/2 c peanut butter

3 cups oats

Directions:
 Mix sugar, butter, cocoa and milk - bring to full rolling boil. Boil for 2 minutes. Remove from burner and add vanilla, peanut butter and oats
Mix well
Drop by teaspoon fulls onto wax paper. (can spray with cooking spray)

Gma T's: Chocolate Fondue

My grandmother, about 2 years ago, gave me her box of recipes. She passed away in April, on the 14th, 2015. My goal this year is to get as many of her favorites onto my Cooking Blog so that I can share them with all interested family and friends.

Ingredients:
 1/2 c evap milk
3/4 cup sugar
1/4 c butter
dash salt
1-2 squares unsweetened chocolate
5 large marshmallows

Directions:
Melt on low heat. Pour into fondue pot.

Dippers: bananas, apples, pineapple, any fruit slices, crackers, etc.
