Gma T: Pain D'Epices

My grandmother, about 2 years ago, gave me her box of recipes. She passed away in April, on the 14th, 2015. My goal this year is to get as many of her favorites onto my Cooking Blog so that I can share them with all interested family and friends.
"This excellent bread makes a wonderful Christmas Gift. Cut into very thin slices and serve with whipped butter or serve it like the French with raspberry jam. It is especially tasty this way! A very good fruit bread is made by simply adding 1 cup of any desired chopped, dried fruit and/or nuts.
Ingredients:
1 1/2 cup boiling water
3/4 cup honey
1 cup sugar (can use brown sugar - all or part)
4 cups flour
1 1/2 tsp baking soda
1 to 2 tsp cinnamon
1/2 cup rum (apple juice can be substituted and 1 tbsp rum extract and 1 tsp vanilla)

Directions:
Pour the boiling water over the honey and sugar. Stir to combine thoroughly. Stir all the dry ingredients into a large bowl. Pour the liquid ingredients into the dry ingredients and blend well. Stir the rum in last.
(For sweet bread: I add 1/2 cup each of raisins and nuts, stirring them in at the last.)
Pour into 10x5x3" loaf pan that has been sprayed with cooking spray
Bake for 1 1/4 hour or until toothpick or cake tester comes out clean.
Cool thoroughly, then wrap and store carefully.
If it is kept wrapped tightly it will keep longer.
