Egg Salad (with a twist)

Ingredients:

6 eggs (seasoned, scrambled and placed in bowl to cool)
Salt & Pepper to taste
1/4 c bacon bits
1/4 shredded cheese
1/2 of small onion (minced or chopped)
1 tomato, diced
2 celery stalks, chopped
1 tbsp mustard (I prefer grey poupon)
1 lg tbsp mayonaise

Wheat Bread- Triangled (optional: toasted)
Dill pickles, quartered

In the bowl with the eggs, add bacon (to taste), cheese, Mustard and Mayo.

In separate bowl place onion, celery, and tomato bits. Salt and pepper making sure the tomatoes are well seasoned. (this makes them YUMMY).

Place veggie mixture on top of eggs, bacon, cheese, mustard and Mayo. Mix, gently until it is combined. Spread onto bread. Place pickle next to sandwich triangle and Enjoy!!

Easy and Delicious!!


Variations:

Place one can of chicken breast meat in with eggs (omit bacon). YUM!! :)
Use with Boiled Eggs
