Basil Chicken

Ingredients:

4 Chicken Breasts (boneless, skinless)
2 red peppers - sliced or diced (I actually have to puree mine because Curtis is anti Veggie) :)
2 tsp Chopped garlic
1 pkg fresh basil - chopped
1 pint Cream
3 cups shredded paremsan cheese
2 tsp Olive Oil
1 pkg pasta (can be whole wheat) cooked al dente

Cook chicken, garlic and half of the basil in skillet over medium heat in olive oil for about 10 minutes. Add the red peppers and lower heat, cooking for 5 more minutes.

Next pour cream and cheese over the chicken. Add the remaining basil. Simmer on low for 15-20 minutes - just until sauce thickens and the chicken is nice and tender.

Serve over the cooked pasta with asparagus or a salad! YUMMY!!
