Tzatziki

otherwise known as Cucumber Yogurt

Ingredients:
  1. 1 tbsp fresh lemon juice
  2. 1/2 cup evoo
  3. 1 clove garlic (minced)
  4. 1 tsp kosher salt
  5. 2 cups plain yogurt (greek)
  6. 1 cucumber (peeled and halved lengthwise
Directions:

In a bowl, combine the lemon juice, evoo, garlic, salt, & Yogurt. Grate the cucumber halves into the mixture. Mix well. Refrigerate for at least an hour. Serve Chilled.
