No Bake Cheesecake

HAPPY BIRTHDAY CLAYTONIAN!! :)
 I can't believe you are turning 12!! Since he asked for cheesecake for his birthday party - that is what he is getting. This recipe is for one big ginormous cheesecake - YUM!!
***This was the BEST Cheesecake  and all of the family raved about it. It was DELICIOUS! Creamy and so good. You really couldn't tell it was a no bake version. I will definitely make it again.

I just made a Graham Cracker Crust: 
I used an entire box of graham crackers and 2/3 c melted butter and 1/2 c sugar - put it in the food processor. I then just poured it in the pan and then just pressed it into the cookie sheet. I liked that it was a thick crust.  If you freeze it for about hour it will keep it from crumbling. Put it in a 375* oven for about 5-10 minutes - just until the edges are browning. Let it cool completely before pouring in your batter. YUM! (I set it in the freezer for about 20 minutes and then was able to pour the batter in without any incident.) 
In fact, I will make it again for this Sunday when we have everyone over for Taco/Tostada Dinner after Clayton's Deacon/Priesthood Ordination. :) YUM!*** 

Ingredients:
4 pkg (240z) softened cream cheese
2 cups powdered sugar
4 cups heavy cream  - 2 cups for cheese cake batter and 2 cups plus 2 tbsp vanilla/lemon extract plus 2 tbsp powdered sugar (whipped until desired consistency) OR 16oz whipped topping
Vanilla Wafer Crumb Crust (see below) OR Oreo No Bake Crumb Crust (see below)
Favorite cheesecake pie fillings as toppings - 4 - 6 cans total (mix and match and customize each piece)
Directions:
Whip heavy cream as directed, set aside.
Beat cream cheese and sugar together then fold in whipped cream.
Pour into Vanilla Wafer Crust and let sit in fridge for at least an hour before serving.
Pour whatever your favorite topping is over each piece individually. YUM!!

Vanilla Wafer Crumb Crust
Ingredients:
4 cups vanilla wafer cookies
2 tbsp sugar
3 tsp vanilla extract
8 tbsp butter, melted and cooled
2 egg whites, lightly beaten (optional)
Directions:
Preheat oven to 350F.
In the food processor, whiz vanilla wafer cookies until reduced to crumbs. Add in sugar, vanilla extract and melted butter and pulse to combine. Mixture should resemble wet sand.
Pour onto 1/2 sheet baking sheet and gently spread into an even layer over the bottom and sides. Press crumbs in firmly to create a tight crust. Use a pastry brush to gently brush the beaten egg white over the surface of the crust (you do not need to use the whole egg white).
Bake for 10-14 minutes, until crust just begins to turn golden brown around the edges.
Cool completely before using.

No Bake Oreo Pie Crust 
Ingredients:
60 oreo cookies
3/4 cup butter, melted
Directions:
Combine all ingredients in a food processor and whizz until cookies are very finely ground and ingredients are well combined.
Pour moist crumbs onto baking sheet and pack into an even layer around the sides and base of the pie plate. Refrigerate for at least 30 minutes before filling.

Makes 1 baking sheet crust

Make it a great one!!
