Gma T's: Quick Bread

My grandmother about 2 years ago, gave me her box of recipes. It is a small 2-drawer filing box and one side is completely full of recipes. Some of these recipes she has hand written and some are cut out of boxes, people have given to her, etc. My goal this year is to get as many of her favorites onto my Cooking Blog so that I can share them with our entire family and my Friend Camille. 

* Type written on card stock (with corrections in Grandma's handwriting)

Ingredients:
 2 qts warm water
7 tbsp dry yeast
3/4 cup sugar
3 tbsp salt
1/2 c olive oil
 2 c non-fat dry milk
18 cup flour (unsifted) 6 lbs
     *can be all white flour or half whole wheat/half white or 7 cups wheat and 11 cups white

Directions:
 Dissolve yeast in 1 qt of water, with 1-2 tsp of the sugar.
Mix all dry ingredients. Add yeast mixture and 2nd quart of water. Mix together with part of the flour. Then add the oil and mix well.
Knead dough about 10 minutes. Cover, let rise until double - about 30 minutes.
Work down, shape into loaves and let rise again until almost double in bulk. - about 30 minutes.
Bake in 400* oven 20-35 minutes - according to size of loaves.
Makes 8 or more loaves.

* combination of flours maybe as you choose - more than 5 cups of whole wheat flour slows down the rising process and you may need more liquid.
